Btw I use the paper towel method too but what works best is usually at Christmas it’s pretty cold here so I put mine outside for a bit n let the fat solidify then I take it off it comes off like butter right off the top all of it.

This year, I is making me own to enjoy for myself (Guyanese accent hee hee) I deserve it! I decided to take a peek at your video & learned some new tips, thank you Candy gurl. But don’t get those nice fresh beef you got. In Guyana we use to go to the butcher at the market. It so different when u buy meet in the supermarket. Last week my daughter bought a pack at B j. @rohmichael2894 all herbs and aromatics like garlic and onions were blended into my green seasoning which was used to marinate the meat. Even though some people add chunks of onion and garlic to theirs i prefer to not make mine visible.

I am going to try making pepper pot for the first time so I searched many recipes but I have chosen your recipe looks simple and delicious, however I would like to know if I can put all the spices into a cheese cloth and put it into the pot and also how long should I pressure cook the cow heel or can I boil it together with the other meats. Appreciate it. Thanks
@bibigarcia637 yes you can add your all spice and the cowfoot you would pressure half done, it would take about one to 1 1/2 hours or so depending on your pressure cooker. You should not boil it with the other meats from start because it is way tougher in texture and need more cook time. That's why I cook mine half way and then add it to the meats to finish up.

Cassareep is usually very scarce the authentic kind isn't found anywhere but guyana. You can find something close to it on Amazon.
