Happy holidays to you both. Interesting you've started using the electric appliances. When I was full-timing I used electric appliances quite a bit. People thought I was nuts. I was using a hotpot, two dorm room size refrigerators, and even a small microwave. Saved a lot on propane. I actually think, if you have the solar, electric is the way to go. Appliances are much cheaper to replace as needed.
P.S. even used a portable washing machine. Saved me a ton of money over a couple of years. Paid for itself in no time.
All of that in a van.

Dogs are such an absolute delight aren't they. They can be a lot of work but worth every second.
I have a summer home that is close to other seasonal homes (camps really). Every owner around me has a dog. They bark continually ALL DAY LONG. The CONSTANT barking doesn't bother the other owners. To drown out the constant barking I play music outside. The other owners CONSTANTLY complain about my music. They approached me about the outside music. I simply said in a calm voice "I will turn down the volume if they as a group will stop with the music when they silence their dogs. So, needless to say I can play my music as loud as I want. Thank you for being the only dog owner in the world that tries to control their dog. SMH at the world of dog owners. PS I love dogs, I just don't love STUPID their owners! Rant over.

The first place you drove into by lake Havasu city was the place my dog was attacked by an off leash dog. I still have scars on my hands/arms from when I had to put that dog off mine. I have not been back since. There are leash rules, but no one seems to follow them sadly. Thank you for being a rhoughful, responsible, dog owner.

Beautiful area! I travel with two dogs as well and basically I’m just a driver and I know they like stopping every two hours for a half hour of fun. The rewards I receive are better than a paycheck.

Might consider an air fryer over induction. We bought one at a thrift store and it only has 2 dials. One for temperature (tho we never change it) and one for time. Be sure to get a basket style. We've baked chicken, meatballs, burgers, steak, fries, shrimp, tater tots and all came out good. Use liners and cleanup is pretty easy.
Instant pot with a saute function might be an option too. I borrowed one and it was okay on taste, but harder to use.
I've made tasty rice dishes with fruit or salsa too. One of the ones we have has a steamer basket that can sit on top. We've done broccoli up there. People often forget how tasty dessert rice is. I've done pineapple, mango or pear cups or just brown sugar and cinnamon. Use a little milk with the water. Unfried rice with slivered almonds, just a dash of soy sauce, edamame and minced red pepper. I don't like peas and carrots cooked, but if you do, use those.

This Electric Sauce Pan is awesome!! And a really nice size. A little larger than it appears but perfect. Great for 2 people, or a meal and left over for 1

I think, with induction cooking, the pan you use has a big impact on how even the heat is. I found that a Cast Iron skillet works really well with our induction cooktop. Since we started traveling in a van, we don't have a lot of space, so I bought a really good no stick skillet/pot from Le Creuset that is induction compatible. It's got small handles on either side, rather than a long handle like a skillet. I can fry in it, It's s deep enough to make soups, etc. and it's got a nice lid. It's become my go-to for induction cooking. It heats very evenly. I got it 50% off at an outlet store in GA. It still wasn't cheap, but it really works well and is a lot lighter than my cast iron.
pan selection is important, the best pans for induction are the ones with a heat conductive core like all-clad (or the cheaper clones) because the heat produced by the induction coil is much more localized than the heat from a gas burner. cast iron is ok, but it conducts the heat slower so even though the center of the pan will heat quickly, it still takes time for the heat to conduct to the rest of the cooking surface. copper core is the best as copper is the best heat conductor, but they cost really big bucks... aluminum core is cheaper and almost as good.
great idea the small appliances with your home powerplant is is a very good idea.

If you love your rice cooker you'd love an instapot. Instapot is versatile it can make boiled eggs, rice, fry eggs and bacon on saute' mode, and pressure cook any meat, potato, or veg and it also has a slow cook setting, great for travel days (set it in the sink and turn it on). I bought a 3qt instapot for my van because my Flex 1500 power station wouldn't run the 6qt I have at home.
Those rice cookers are great. I have the bigger one and do burgers, chicken and pasta in it.

Old Hobbs may save your bacon someday with the barking alert..You could run a small minisplit in that truck..I have the cabin in the forest, and a mobile set up..I built my 48 volt batteries out of some really good 280Ah CATL cells, The all in one EG4 6000 XP for the cabin, 30 KW battery, 5,000 watts of solar..That inverter is so good, runs 120 and 220, can handle 8,000 watts of solar, built in solar disconnect, and circuit breakers for AC and DC..And has a track record that would blow your mind, they just don't fail, made by Luxpower..Have the same thing in the mobile set up, tow behind travel trailer, Just the EG4 3,000 watt inverter and 15KW's of battery(16 280 Ah CATL cells) and (8) 370 watt panels..I run a mini split for AC and heat..I built several cabins on my 14 acre forest property, they are just beautiful bedrooms in the forest, with lots of windows,deck, porch, picnic table, fire ring, that I rent out on AIRBNB..Rent out the travel trailer too in the summer..I got those cells almost 4 years ago, they averaged 292 Ah's, tested them a month ago and they are still around 286 Ah's, which is well above there rating of 280Ah's after almost 4 years of everyday use...That 6000 watt inverter is brand new for America, but Luxpower made them originally to run well pumps and small villages in Africa, and they kept track of there performance, which really is mind boggling.And I got mine with a coupon for $1,240 dollars..Going solar is really alot easier and cheaper these days if you DIY, and know what to buy..Those (8) 370 watt panels were delivered to my door from A1 Solar for $1,260 exactly, and delivery was $280, so for under a thousand dollars, 3000 watts of solar panels, with half cut perc technology and 30 year warranty..The CATL cells are a little more expensive, $1800 for every 16 cells, but that is nearly 15 KILOwatts, that is a little over 11 regular 100 Ah premade batteries..Hope that helps someone out there..Happy Holidays..

MERRY CHRISTMAS!!!! Dogs are getting vitamin D while they are laying in the sun, plus the warmth helps older dogs like Hobbs with their joints. Our almost 12 year old bulldog loves laying in the sun, she moves when she gets too hot, she knows when that is.
Thank you. Yes, unfortunately Hobbes has a condition where he gets really sick with too much sun, he doesn't know when like most dogs. Same with water. He will drink a gallon of water if you let him, until he gets sick. He is a special needs dog, but we love him dearly. Iit's worth the efforts. Merry Christmas
