Made a huge batch today. Probably the 5th or 6th time I made this polao. Since you guys said 300gms would yield 4 servings, I was cooking for a dozen people so I tripled everything and used a measuring scale. I get chills when cooking in large quantities but today it was so easy and seamless. I kept everything ready, measured out the spices on a scale and just approached it with patience. It turned out just perfect. My mom's friends were over for lunch and they all loved it so much! I honestly didn't know I could cook like pulao like this. And whenever I follow your ecaxt measurements and methods, i never fail . Made me realise how hard you guys must be working to get the recipes across to us. Grateful as always!

Coincidentally, we too made a large batch of polao last evening as we have family visiting, and if we say so ourselves, having a set of measures to rely on really took guesswork out of the equation. Assalam walaikum..Close the flame and then mix the rice well with the vegies. Make sure rice ain't over boiled so that it doesn't stick in the kadai... Use appropriate amt of oil and non stick kadai... After mixing than stir it in low flame

Made this today. Followed every step almost properly. The polao tasted divine. Only thing is, after adding the garam masala-pepper etc spices seasoning and steaming the rice, the colour of the rice became slightly brownish unlike the white colour of your dish

Hey, how do you know when rice is cooked to “90%?”
That's a tricky one. There's no sure way of conveying that. You need drain the water when you think the rice is still a bit harder than usual. It shouldn't be raw in the centre, but at the same time not fully cooked.

Lovely presentation! How do you steam rice on low heat without water for 20 mins?
On a very, very low flame, or on the lowest setting of an induction oven. If your gas stove does not go very low, you can even do it for a shorter time (say 10 minutes) and then turn off the stove, and just let it steam with the lid on for another 10 minutes.
