I'd be concerned about other residue like whatever they used at the factory to produce the pieces. There could be dust other than stone etc. Especially if the mortar was made in China where they might not have the same regulations and QA. But this is my personal concern.

After you season and start using, do you just wash with water even after using?
Yes I just rinse with water, I don't use soap. If I grind something particularly potent, I grind rice again to help neutralize the scent
Should be noted that minute/instant rice should be used

For the first use, some of the rock could break away in larger chunks. Seasoning first smooths out the surface and gets rid of any big pieces of rock.
