Two Delicious Zucchini Muffin Recipes + Harvesting And Prepping The Garden For Fall

This is one of the only ways i can get chris to eat zucchini 😂❤️ here is the base recipe. It makes 2 loaves of bread or two batches of muffins.
Best Zucchini Bread:
3 eggs
2 cups sugar
1 cup oil canola or vegetable
4 cups fresh zucchini grated, liquid drained
2 teaspoons vanilla extract
3 cups + 3 tablespoons flour
1 1/2 teaspoons cinnamon
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
Preheat oven to 375 degrees. In a large bowl combine eggs, sugar, oil, zucchini, and vanilla until smooth. Add the dry ingredients and fold in. If making blueberry recipe add in 1 cup blueberries. If making walnut/chocolate add in 1/2 cup walnuts and 1/2 a cup chocolate chips.
If making bread, bake for 40-45 mins. If making muffins, bake tor 20-25 mins.
