- Today I’m sharing with you one of my favorite summer recipes - peach crumb bars. It’s so delicious and so easy to make!
🛒What you need:
For filling:
peaches - 6-7 pieces
lemon juice - 3 tbsp
sugar - 1 tbsp
cornstarch - 1 tbsp
For crumbs:
all-purpose flour - +/-400 g
baking powder - 10 g
salt - a pinch
granulated sugar - 100 g
vanilla sugar - 8 g
zest - 1 lemon
unsalted butter - 180 g
eggs - 1 piece
A 12x8-inch baking pan
📝How to make:
▪️ Preheat the oven up to 180°C
▪️ Zest 1 lemon and juice 1/2 lemon
▪️ Add the lemon zest to the sugar, mix and set aside for 10 min
▪️ Cut the peaches in cubes and sprinkle with lemon juice
▪️ Add cornstarch and sugar, mix and set aside
How to make crumbs:
▪️ Mix dry ingredients: sifted flour, baking powder, salt, vanilla sugar and sugar+zest
▪️ Add softened butter and mix well using a fork, then your fingers until crumbs*
▪️ Add a lightly beaten egg and mix well using a fork, then your fingers until crumbs
▪️ Spread 1/2 of the crumbs in the pan and press it with your hands
▪️ Spread the peaches over the crust
▪️ Spread the remaining crumbs over the peach layer
▪️ Bake at for 45-50 minutes until golden brown
▪️ Cool the pie before removing from the pan
▪️ Cut in bars and serve
*Note: You will need less flour if you use cold butter.
