  • Fabulous Fish Fry recipe
    1 - 2 cups of flour (more if/as needed)
    1 egg mixed with 1 TBSP water
    2/3 cups - 1 cup bread crumbs (more if/as needed)
    Add 1 TSP paprika and 2 TBSP Oregano to bread crumbs
    Grapeseed oil or veg oil for frying.
    4 - 8 fillets of fish
    Serves 2 people

    Hi - thank you for this recipe. I’m 32 and have never eaten fish or cooked it. I had a bad experience with shrimp when I was younger. I ate the poop trail and from that day on I would say I was allergic to fish or anything from the water or sea. I LOVE to fish. I ABSOLUTELY LOVE to ice fish. I spent thousands of dollars for ice fishing gear and I figured I might as well try what I catch. Everyone I know recommended perch if I could catch it. Well I catch a lot of perch! So at 32 years old I finally filet the perch. Breaded and seasoned the filets. Fried them. Squirt some lemon on them and sprinkled some salt. WOW! Absolutely amazing!! Thank you for your video & breading recipe.
    I also think your personality is very awesome and personable.

      Northern Michigan had a terrible ice season. Early freezes, early snow insulating it and repeat through February. But spring is coming and the walleye and crappie better be worried!

    Fantastic. Spent many hours on Lake Erie with my grandfather back in the early seventies through the early eighties, catching BUCKETLOADS of yellow perch and walleye. (I live in Ohio) A friend just gave me some perch he caught recently and I can’t wait to try this recipe! Side note: was in my local butcher/fishmonger’s market yesterday getting some ingredients and they had “wild-caught, Lake Erie perch fillets” for-are you sitting down?! THIRTY TWO NINETY NINE A POUND! 🤯

    Thank you very much sir! I am from Waukegan IL.... and we go to a lot of supper clubs in Wisconsin. Nothing beats perch! Lake Perch!!! I can eat this every Friday. Local market here in the area sells Lake Perch fillets... I’m going to try this! I like pairing my perch with a nice bake potato! Prior to eating ... it’s best to enjoy a couple of Brandy ol fashions! I will give this a try. Cheers!

    That's basically the recipe I've been using since I was a kid (sometimes the oregano is swapped for store bought Italian Seasoning) and my mouth starting watering as soon as this video started. Great recipe for just about anything we catch here in Ontario. Great video!

    Had to login again to give you thumbs-up after trying the recipe. After tasting, my children immediately gave me thumbs-up. They went as far as asking me if they can get more tomorrow. The only adjustment that I made, was using mixing some spices with the bread crumbs so I didn't have to add salt. All my seasoning is from Jamaica. Again, great recipe.

    They look delicious...Try adding Mashed Potato Flakes to your bread crumb mix. It adds a little lighter texture and tastes great.

    Never tried perch before, but if this recipe is anything like your walleye recipe, i'm sure it's fantastic.
    With that being said, after trying "oil of oregeno", I don't think i'll be putting any of that on my fish :)
    Now I just need to find a way to catch perch without a flasher, limits of 15 here most places (tho i would only keep 2 or so), as oppose to needing a tag for walleyes

    Ivo, Thanks for the recipe. I just tried it today with Walleye & it was very good. My daughter also like it very much. Just wondering if you have ever tried this recipe in an Air Fryer? I don't often fry things at home, but sometimes wonder if I shouldn't try some healthier options.

    Hello from Youngstown we love fish first because we don’t eat a lot of red meat plus it’s healthy for you my mom is 93 loves Lake Erie perch. My question is y don’t mine come out like yours did. I use olive oil and vegetable oil I would think my oil is hot enough but it sticks sometimes and falls apart and I fry skin side down right away it curls up on me?? I see a lot of chefs cook with grape seed oil. On the pricey side but probably better for us. Also my dredge seems to stay on the wet side not crispy and crunch to it like yours. Please help me. I actually made perch for dinner tonight but I just pan fried in butter and light drizzle of extra virgin oil came out good but we like perch breaded and fried. TYIA

      Just use straight vegetable oil and make sure it is about 360 degrees F before you put the fillets in - also, you should pat the fillets dry (can use paper towel) before you coat them, this will help also. It sounds like though, the oil was not hot enough, so again, just use vegetable oil :) Also, if the fillets are room temp as opposed to straight out of the fridge, this will also help. Further, the skin shrinks when fried, so try frying skin side up and if you put a slit or 2 in the skin, this should help also with the curling. Send my best to your 93-year-old mom :)

    Those had to truly be Jumbo perch to put of fillets that large. All be trying this simple recipe except all add in some graded parmesan cheese as well

    Ivo how do you like crappies. To me they are the best then Lake Erie perch, then walleye, then smallmouth bass. But I don’t like largemouth too strong fishy taste 👍on the video

    Why do you prefer the not-quite-shallow fry to deep frying? Deep frying allows the cook-through to be very even, helping avoid over-cooking one side of the fillet. Plus, if the oil is hot enough, the drainage of oil from the breading seems most complete after deep frying. Also, deep frying seems gentler on the breading.
    Other than staying under the smoke point of the oil, is there a temp that's too hot for skinless yellow perch fillets?
    Because the seasonings are often denser and finer than the breadcrumbs, they fall to the bottom of the breadcrumb bowl and end up concentrated on the last fillets of that batch. At least for the fine seasonings, seasoning in the flour stage, rather than with the bread crumbs, seasons the fillets more evenly and consistently. Oregano, for instance, can stay with the breadcrumbs, but paprika, ground pepper, and, most importantly, salt, in my opinion, work really well if added with the pre-egg flour. ...some seasonings appear to work really well mixed into the egg, too. The salt will actually dissolve in the egg.
    Finally, sometimes the best way to go, when it comes to seasoning yellow perch, is just salt; not even ground black pepper. (I never not use black pepper, but that's just me. "I pepper my bed pillows" describes how married to black pepper I am.) Add just a splash cayenne malt vinegar right before popping a bite in your mouth. ...or a grind of black pepper and a squeeze of lemon.
    Of course, if you're lucky enough to find yourself cooking yellow perch frequently for dinner, switching to a more sophisticated batter approach might provide variety.

    Paprika tsps, oregano dash or two, 3/4 cup bread crumb
    Egg, with little water.
    Flour, then egg, then dry mix
    380’ veg oil, ht enuf, no stick, fill bottom pan, 1-2 minutes a side.
    Dry filets first

      egg is already mostly water. you remove the water from the surface of the fish so the breading doesn’t fall off.
