  • Ingredients:
    For 12 Cupcakes
    2 Large Egg Whites
    135g White Sugar
    230g Unsalted Block butter (no oil in the ingredients)
    ( I used 150g Unsalted and 80g Salted)
    1/2tbsp Vanilla depending on brand and personal taste
    70g/ml Water
    100g White Chocolate, Melted and Cooled
    For 6" Cake (3 layer)
    3 Large Egg Whites
    200g White Sugar
    345g Unsalted Butter (230g Unsalted and 115g Salted)
    3/4-1tbsp Vanilla Extract
    105g/ml Water
    150g White Chocolate, Melted and Cooled
    For 8" Cake (4 layer)
    4 Large Egg Whites
    270g White Sugar
    460g Unsalted Butter (300g Unsalted and 160g Salted)
    2-2.5 tbsp Vanilla Extract
    140g/ml Water
    200g White Chocolate, Melted and Cooled
    Bring Syrup to 117C
