Why is it that everytime I try to make Italian or Swiss merengue buttercream it never seems right? When I put the cake in the fridge it becomes hard and is pretty much like plain butter consistancy, and the taste is always way too butter as if you are just eating butter on a sponge.
Add more flavouring or beat your buttercream for much longer. And yes it will become hard in the fridge if it contains butter - always place cakes in a lidded airtight container and bring to room temp before eating.
Hi Evelyn, buttercream icing can be refrigerated in an airtight container for two weeks. Before using, bring icing to room temperature and stir with a spatula or re-whip with a mixer. Hey! yes russian piping tips work perfect In terms of Italian and swiss, they are almost the exact texture, maybe beating the egg whites longer will help.
Is it possible to sub out part of the butter for shortening? Whenever I make Swiss meringue or Italian meringue buttercream, my daughter just says it tastes like straight up butter.
Hey sam! I make Italian and swiss religiously, and my main issue at frist was the buttery taste too! If a recipe calls for 1 cup butter, 1/2 cup egg whites,1 cup suagr salt and vanilla. Take out a tablespoon of the butter from the recipe, even when it's just a tablespoon, I find that it helps. Also whip it for a while, like 12-15 min. However sad to say a Company that was being allowed to sell on a Social.Media site (They were selling reconditioned Kitchen aids) I purchased and NEVER RECEIVED. after chasing the company with many mails they said it was not delivered as I was not at Home..Then they said It was delivered (I was not at home as I was at the chiropractor ) I live alone with 2 cats. So they received my money..I have no Kitchen Aid..Maybe one day I will finally afford one.. I keep dreaming. Love the video though. My biggest hate are liars. Thank goodness I have a very strong faith and am aware of where Liars are sadly heading.. I cannot imagine how much money this company made from (Selling reconditioned Kitchen Aids) and then lying, stealing in fact my money. So although I have lost money with this company and sadly for those genuine companies who do sell reconditioned Kitchen Aids etc and other products, Sadly I do not trust that monies will be attained and products not forthcoming. So it's sad, however Thankfully I trust that soon (All wickedness which includes lying cheating stealing etc) will be done away with. This gives me a peace of heart and mind that deceivers will no longer be around to deceive anyone else. But hey I have my two hands with which I bake many items but for sure this recipe really does deserve the help of a Kitchen Aid 😅😅😄😄

Yes it is. Either than chocolate ganache it is the steadiest buttercream in the world and is perfect under fondant
