Without being too backseat-ey, I'll share probably the most significant insight I've learned from a defense standpoint: Completely enclosing an area with walls prompts the Vikings to bring ogres. Therefore, by leaving a section open (and fortified with plenty of towers), you'll only have to deal with regular infantry coming into the single entrance. You can use this technique to make effective "kill zones" that double as pretty grand entrances to a city!
To make the ballistas you can place walls next to it to increase the height before you could make it so with 2 walls you could go to the height limit. Place one ballistas and one Archer tower. Idk if it works now
I recccomend building more archer towers as they deal with infantry better, the ballistae are mainly for use against the dragons, ships, and orcs. You should also leave the archer towers and ballistae turned on 24/7 so that they can build up skill. More skill=more damage. Also, the fire emplacements are deadly against enemy ships and infantry.
Your not checking where the doors are for the entrances. You put the door to the chapel to face the water, and I feel like you have housing doing the same.
