Here's my personal opinion on Wandering Trader :
If you notice, then he only becomes invisible at night, because he also resembles a human figure in game...just like villagers but nomad (who has no home).
So, he need to survive from zombies and other hostile mobs right ?
That's why he drinks the invisibility portion to keep himself hidden from zombies and remain safe.

In wandering trader topic I don't know about Java edition but definately in bedrock they drink invisibility potion only when they see zombie or some other mob is going to attack him.
And yes I tried allay in bedrock and they literally not dying after 6 crit of netherite sword.

Bixu bhai... According to my theory.. The wandering trader hides himself/makes himself invisible in nighttime because of the zombies...as zombies attack him too. That too,He is very similar to a villager. According to ur theory, villagers are very smart,so he (wandering trader) is as well and knows that the zombies are dumb,and would come for his brain that's why hides himself so zombies don't see him.
