You know Crisp Rat is serious when he gets SUPER PREMIUM ice cream to make the Grimace Shake at home. As for why it doesn't freeze, your dulce de leche ice cream in particular has caramel! Water-based ingredients with a high sugar content, like caramel, will not freeze until well below the freezing point of water. When you freeze a caramel, the sugar will prevent a lot of the water from freezing and forming a crystalline structure. However, from a certain temperature onwards, part of the water will freeze. This water will ‘leave’ the sugar solution, leaving you with a liquid sugar solution on one hand and water crystals on the other.

Grimace lore: Grimace was first introduced in November 1971 as Evil Grimace. And the Klasky Csupo animated series The Wacky Adventures of Ronald McDonald states that Grimace was part of a species of Grimaces from Grimace Island. In The Wacky Adventures of Ronald McDonald, he's voiced by Kevin Michael Richardson...who also voiced CAPTAIN GANTU in Lilo & Stitch and KAMEK in the Super Mario Bros Movie!

Dulce de leche ice cream usually has pieces of raw dulce de leche on it apart from the ice cream part, so it's not entirely frozen and solid but semi-liquid.
Dulce de Leche is a DELICIOUS ice cream flavor! Adding that to the recipe was genius!
