I worked in Monroe County for years and ate bbq almost everyday while there. It’s great food. Grand view bbq was one I remember the name of then Tooley’s was another after that they had a little stand up by the grocery store but don’t remember the name of it. There were also little bbq stands around Gamiel Ky too couple of good ones out that way and used to be Dumas Walkers somewhere round that neck of the woods too.I Haven’t been there in a good while now though.
I love that series, I met Steven once when he was in Austin. He's just like he appears on camera, just a super nice guy. I'm really liking my Arteflame insert for my Grill Dome.

Born and raised in St Louis, now living in NY I have introduced dozens of people to my version of BBQ Pork Steaks. I smoke mine for about an hour and then glaze and grill. If you close your eyes while eating you will understand why I call them poor man's ribs.
This is the best pork thing I have ever eaten. What a surprise. Cooked your recipe exactly except cooked them on my PK Grill. Just outstanding. I may never eat ribs or pulled pork again. Thank you very verymuch

Is it the camera angle or does the 40" One Series Arteflame look HUGE in this video. I can tell Steven isn't all that tall, but the scale looks different from other videos I've seen. Gorgeous grill....must have.
Born and raised in STL and have been cooking Pork Steaks for years. The steaks look awesome in this video but cooking them for only 10 minutes they will be as tough as a leather! What you should do after you sear them is put them in a aluminum pan(with all that sauce)seal tightly with foil. Put in oven on 225 for about 3 hours and they will be tender enough to cut with a fork. YW.
dude there is a small grocery store and meat shop in christopher illinois that has the best pork you have ever eaten. they will cut pork steak to whatever thickness you want them they are outstanding.
Those steaks are looking great, but I have not seen one of those large smokers before, and wonder if that would work on a regular grill. We do plenty of grilling outside here in Arkansas when the weather permits, and will be cleaning up my grill to use it soon.

The shoulder is sliced 3/16" thick here in Monroe County KY ...... it is called shoulder...... not pork steak. ....his sauce is slightly different also but fairly close
Really Steven, Cajun BBQ pork steaks are staple around here. Made with a Cajun Style BBQ Sauce like Pig Stand or Jack Millers. I’ve learned a lot from you over the years. However, you are mistaken here about finding pork steaks only in Kentucky and St. Louis and no where else. They are quite common around here.
Don't worry about the expensive grill. I'll do just about anything with my (found out out with the trash freebie) Weber kettle that anyone else will do on theirs.
You can use the inside circle as a grill and the outside rim as a griddle surface. They make much smaller ones Steven obviously has to get the biggest one a company offers.
@@knockitofff Not misinformed, pork has been raised a lot cleaner the last 30 years. A bit of pink is OK in modern pork. So before the 1980's you would want to cook pork to not show any pink.
Unbelievable! In a recently aired episode Steven was making 3 or 4 different burgers. One tip was to wash your hands in soapy water between burgers to protect cross contamination (but to be honest if you bought all the meat at the same store and you think that one might have e-coli....). Still, he goes on to show how to make them, one type after another, into patties by dipping your hands in water, then forming the patties. When he finishes the first 4 He washes his hands, then goes back and dips them in the water/w-coli & salmonella slurry, then applies to the meat. He does this for the remaining 3 types of burgers. What a huge idiot. Clearly he is not a professional anything. When you cook clean it becomes part of every move you make in the kitchen, not something you MENTION OUT LOUD then ignore right away.
Arteflame grills really have a Japanese minimalistic beauty however is looks a bit on the expensive side to lit a cooker like this for a couple of pork chops I can understand if one has a party and cooks for 20. there is something immoral about how the wealthy spend their money
Is it really a question of how hard you work? Global warming and use a lot of coal and wood to cook less than a pound of meat? you Americans use more fuel than anyone else, but of course compared to the lazy Mexicans and Chinese you work really hard :)@@punkem733

Hey Steve, has no one ever explained to you that grilling is NOT barbeque? Apparently not. They are actually opposite things. Grilling is HIGH HEAT for a short time, while Barbeque is LOW HEAT for a long time. I know, some people use the terms grilling and barbeque like they are the same thing. Some refer to any meat cooked outside as barbeque, but that does not make it so. Actual barbeque has ALWAYS meant "low and slow." Words do have meaning, and the distinction is real and not merely semantic. Please do not perpetuate ignorance. I will get off of my soapbox now. Peace.

20 years ago I paid $10 for a used, garage sale, Weber Kettle grill....I still use it 3-5 times per week. They are awesome
