- Today's Cocktail is the Monkeypod Mai Tai and comes to us from The Monkeypod Kitchen in Maui Hawaii. It's a really inventive and delicious reconstruction of a Mai Tai and given my absolute love for that drink, I felt we had to do it. So yes, this week's drink is not only another Mai Tai but also features some more advanced technique. Well really just another piece of equipment. We also made a very limited edition Educated Barfly Mai Tai glass. Snap these babies up because once they're gone, they're gone for good.

1oz (30ml) Dark Rum
1oz (30ml) White Rum
.5oz (15ml) Dry Curaçao
.75oz (20ml) Lime Juice
.5oz (15ml) Macadamia Nut Orgeat
Top Passion Fruit Foam
Macadamia Nut Orgeat
300g Warm Water
250g Caster Sugar
150g Roasted Macadamia Nuts
2 Dashes Orange Flower Water
Pinch of Kosher Salt
Passion Fruit Foam
1.5oz (45ml) Cold Water
1oz (30ml) Passion Fruit Puree
1oz (30ml) Simple Syrup
.5oz (15ml) Honey Syrup

Lucky enough to have had this in Kaanapali. Maybe I’m a little bit biased as it was during our honeymoon in maybe the most heavenly place on earth, but after just one sip it became my favorite cocktail ever. I can’t wait to try and recreate it back at home now!

I've had several scores of these in Maui. Your video is the most authentic of any I have seen. I've tried to recreate these myself and went so far as to order the exact honey they use (which is from the Ohi'a Lehua blossoms on the volcanic slopes of Hawaii -Big Island Bees company) compared to a different flavor in the states from clover blossoms. It's never the same ;) Anyway, these same Mai Tais are now also served at Maui Brewing Company restaurant (where at least you can walk in and get a seat).
Just got back from Maui last week, and the Monkeypod’s Mai Tai was indeed THE best drink anywhere on the island. Hauled back enough passionfruit syrup/purée and macadamia nuts to try this one at home. Thanks for the recipe….👍

Just returned to the mainland from visiting friends on Maui. We made them do the “tourist” things with us. One of those things was a trip to Monkeypod. They did not object at all. The MaiTai Monkeypod makes is as impressive to the locals as it is to the infrequent visitors.
So my only comment would be having been to Monkeypod and watched them make these through the years they seemed to have changed the process. They used to pour all the ingredients, the orgeat, the lime and light rum in the glass first add the ice and the float of dark rum and foam. Maybe they changed recently…Great video thought !!!

The foam is more of a yellow color at the restaurant in Oahu. I wonder if they dye it? I purchased passion fruit puree from Hawaii which looked pretty orange, but when it came out of my dispenser it was very pale like in this video. It tasted correct but the color was not.

New to the channel awesome videos. I saw the foam is good for 3 drinks but needs to be refrigerated for an hour. Do you need multiple foamers or how can you make extra foam to pour 6-8 drinks?
What would you guys use for the base in this cocktail if you were trying to avoid rum?

My Christmas Mai Tai Recipe ->
Basically the original Trader Vic's but replace following ingredients:
Triple Sec with Liquor 43
Sugar (sirup) with gingerbread sirup
Lime/Mint garnish with cinnamon
Tastes great, fresh and intense like a Mai Tai but with an interesting christmas like twist.

After having had quite a few Monkeypod mai tais from both Monkeypod locations in Maui, I decided to make them for my annual Xmas Eve celebration with friends and family.
There were fantastic and - dare I say - significantly better than the original at Monkeypod. They use Old Lahaina rum (both light and dark) because it's local to them. However, those rums are nothing to write home about. I used Denizen's Merchant's Reserve 8, a rum formulated for mai tais, and a float of Plantation O.F.T.D., a rum formulated to deliver a boozy hit of rum deliciousness.
The extra rum funkiness really played well with the lilikoi foam sweetness. A major hit.
A chinois won't filter nearly as much, I use that for some french sauces though.
How many mai tai foam does that make. Having a party this Saturday and i want to be able to make many! Thanks

yes, you can whip it. Just try not to make it too thick. It's very easy to over whip it

Good stuff! Might be time for me to finally make home-made orgeat. Pretty sure you only need 2 "chargers" (nitrous canisters) for the 1 quart (large) size iSi though. Save yourself some money. 😄
Since he was putting only about 6 ounces of ingredients into a 32 ounce capacity whipped cream can, using only 2 nitrous charges would result in a pretty weak stream of foam. 3 or 4 charges in this scenario is much preferred. Cheers!
@@wtgldwielder Are you saying this from having actually tested it, or just from first principles reasoning about the volumes involved? A single charger emptied into a 32 oz whipped cream cannister should create roughly 4 atmospheres of pressure or about 60 PSI. And that's with *no* liquid in there. For reference your average home-use mechanical compressor creates about 90-100 PSI.
I'm not saying you're wrong, I just want this to be tested rather than assumed. From experience (and as *frequently* demonstrated on this channel), the accepted wisdom around *many* things in the bar/cocktail (and broader food) world is often wrong or - if correct - only makes a tiny difference.
Has anybody thought about putting a shot or two of vodka into the nut milk before the first time you blend it, to not only make it more shelf stable but also get all the alcahol soluble flavour compounds that the water might not be getting?
Fresh passionfruit is almost never available in my area (midwest USA), and with the rising cost of Liber & Co. Passionfruit syrup, do you have suggestions on where to get passionfruit puree for a decent price? I've heard of Funkin available on amazon, wasn't sure how long one of their packages might last. I see Passion Reàl a lot at stores locally, unsure if it's worth getting. Thanks!
I use funkin and freeze it to preserve and it works great.Also check out Perfect Puree they’re reasonable and you can freeze too
We used frozen passion fruit by Pitaya Foods. It comes in bite sized pieces in a resealable bag. We found it at our local Wegmans store, but Whole Foods and Target also carry it. It's nothing but seedless passion fruit puree in small frozen cubes, nothing else added. It worked out perfectly in this recipe. So good!
