I’ve taken the distillery tour at Witherspoon before. Really neat place, and really neat people. They’re set up in the old Piggly Wiggly in old-town Lewisville. As I recall, as a Marine he spent quite a bit of time in Africa and received extensive training in water purification and distillation. Upon being discharged, he transferred that knowledge to whiskey making... but it’s been several years since I went, so I could be mis-remembering.
Hi Daniel & Rex, I've been binging your videos on both channels for a few weeks now and I've bought close to €1500 worth of scotch and some Irish. Bought and finished a Lagavulin 16 a few years ago after being inspired by Ron Swanson :p, so I knew I could handle the strong stuff and also had some Flaviar samples of whiskies that helped with the Irish and friendlier scotch. Bought some Laphroaigs, Ardbegs, a redbreast, a couple bourbons and a bunch of others I got based on these vids. So far, I've tried a couple Laphroaigs (an cuan mor, PX cask and Lore), Lagavulin distiller's edition and Ardbeg 10. Loved all of them. Lore is a thing of beauty. Very happy I found you guys, it helped me finally build my booze collection with style. Keep up the great work, much love from Belgium, slàinte!
Witherspoon is the real deal. I've bottled the bourbon and can tell you it is DISTILLED in Lewisville (not Louisville). You should tour the distillery some weekend day. Love their port finished bourbon too - gives Angel's Envy a run for its money. Again, Witherspoon is a distillery, not just a bottler.
Once opened the flavor flattens in a matter of weeks. It'll "last" for quite some time, but for best results consume (or share with MBs) relatively quickly. This one was Pomegranate, scorched honey, a blend of spices, and barrel aged for about half a year.
My wife just realized how pricey my little whiskey bar is, shes not a drinker so she looked them up online and did the math...... in my defense I said “ you buy expensive make-up I buy whiskey”
Can’t thank you guys enough for your whiskey input! I’m typically a rum and coke guy, but after watching Peaky Blinders on Netflix, and watching those bastards drink whiskey all day I found myself wanting to sip some whiskey as well. So since starting trying different whiskeys back in November I’ve 13 different kinds all between Irish, scotch, and bourbon. So far turns out I’m a bourbon guy, specifically Elijah Craig. I’m a blue collar working bastard, and am not looking for the expensive bottles. Just something I can enjoy. I’ll continue to experiment with other whiskeys but it’s nice to have found my “go to” thanks to you guys! Prost!!

Ok So I discovered I am an Islay guy when it comes to Scotch. I had tried types and was kind of blah about it until I followed in Daniels footsteps and tried Laphroaig. The world came to life and unicorns started to dance...lol Now my question to Daniel and maybe that mooch too is where to go from there to explore the Islays and what other regions can compare to the flavors and smokiness of Islay Scotch. Also for the mooch I found a couple of whiskeys here in NYC that I am bringing back for you to review. I live in Temple, Tx so where can I bring them?

Would putting CO2 into the whiskey bottle help preserve it or keep the flavors more similar to the first time you open it? I just bought a product called "private reserve" which is a blend of Argon, nitrogen, and CO2 which is supposed to do that. But I work at a brewery and have access too pure CO2 so I was wondering if I could use that instead. P. S. If ardbeg dark cove is you're first whiskey of the night, what's you're second?

I believe India is one of the biggest producers and consumers of whisky in the world. However, almost all of it is distributed internally. The only brands that I am aware that have international availability are Amrut and Paul John. Due to their climate, Indian whisky does had a unique flavour profile. As I understand it, tends to be almost spicy. Paul John is closer to the traditional Indian style. Amrut, on the otherhand, is specifically trying to create a Scottish-style malt. For their peated expressions, they are importing peated barley from Scotland (I believe it's from the maltings in Inverness). Due to climate, they have to be very careful about over oaking; apparently spirit "ages" at least 3 times as fast as in Scotland.
There are others, too, but they really don't seem to have the same level of market saturation as Amrut and Paul John (at least in my neck of the woods).

the only mead i've tried, i purchased at the LCBO, years ago, I can't remember who's, but i remember the fruit and honey taste, as well as a strong clover (which lead me to assume it was also clover honey as well), contributing to an almost overpowering muskiness. Don't mix the lees. Pour carefully so it doesn't mix in as lees is bitter and off-flavoring. Home brew gets it often, it's the leftovers from fermentation.
@Mark Halstead that's interesting. With such little lees I suppose it doesn't matter that much, but the only advantage I could see to mixing it in is so you don't have to look at it in the bottom. Lees is just the remains from yeast that wasn't filtered out. Even after racking numerous times you can still get a little bit in the final product that will settle eventually. I make meads regularly. I've tasted lees, not the best of flavors so I never mix it in and always try and get as much out as possible but it's very difficult to truly get it all. The French can keep that tradition imo. To each their own - c'est la vie.

I'm planning on going commercial, so I'm keeping the specifics quiet. I recommend picking up a copy of "The Compleat Meadmaker". It's got a fairly comprehensive cheat sheet of yeast stains. Makes a great jumping-off point.

@Mark Halstead that's interesting. With such little lees I suppose it doesn't matter that much, but the only advantage I could see to mixing it in is so you don't have to look at it in the bottom. Lees is just the remains from yeast that wasn't filtered out. Even after racking numerous times you can still get a little bit in the final product that will settle eventually. I make meads regularly. I've tasted lees, not the best of flavors so I never mix it in and always try and get as much out as possible but it's very difficult to truly get it all. The French can keep that tradition imo. To each their own - c'est la vie.
For this particular mead, the yeast was chosen to allow the off-flavors to not compete if it gets mixed in so it could be enjoyed either way.
@@burleymullins8776 It looked lovely. Which yeast did you use if you don't mind me asking. Most commonly I use either D47 or 71B so I'm wondering if I'm missing out on a better strain.
I'm planning on going commercial, so I'm keeping the specifics quiet. I recommend picking up a copy of "The Compleat Meadmaker". It's got a fairly comprehensive cheat sheet of yeast stains. Makes a great jumping-off point.
