Alipay starts the QR code payments from 2011 and it becomes widely adopted because seller just need to print that out with basically no cost. That happened even before the card industry trend of upgrading into Chip card (and its reader which cost a lot for an upgrade) So basically in China we still see a lot of Magnetic Stripe cards which was not used ‘physically’. We just link the card to your Alipay/WeChatPay account. No need for a chip card and bring the card with you, with your smart phone with you all day
Anything can be customized before ordered in China. You just have to tell. You wanna add extra ingredients, You don't like specific ingredients, you can just tell. Let's say you don't wanna lettuce in a burger, you wanna switch the meat pie to an egg pie in a burger or whatever, just tell when you order anything. No taboos.
Bank card payments require a POS machine while Alipay only needs a piece of paper with QR code on it. For small venders the latter cost nothing and can be done within minutes. 5:24

you really need to say you're a 素食者 vegetarian in China. You can also ask for less sugar at the tea / coffee shops. Which date was the Thursday? In China the restaurants should give you hot water / tea and never tap water..it might be bottled water if it's room temp
