But he's only using a fraction of each syrup... I recently tried the Thai bottled 'Coffee Instant Drink (O-Lieng)' by Cofe Brand. Per ounce, this very dark and strong oliang drink has *twice* the sugar of a regular Coca-Cola(!) -- though, it's supposed to be served with lots of ice. The 26oz bottle suggests it is two servings, but a single espresso shot's worth of it is too much! Still, I hope to make a traditional version of Thai iced coffee (kafae yen - with Pantai 'Oliang Powder') with a restrained amount of sweeteners (sugar, condensed milk, evaporated milk).

It's syrup the sugar preserves it. Also like another poster said, only a very small amount goes into a drink, which is why it put it in a bottle.
