We actually have a seasoning calculator at waltons.com that you can use to show the amount of seasoning you need to use for any sized batch. It will even show you additives that should be used based on the product you are making! The following is for 6 lb of Summer Sausage.
Usage per 6 lb of Meat:
H Summer Sausage Seasoning: 5.64 oz (159.89 g)
Sure Cure (Pink): 0.24 oz (6.80 g)
High Temp Cheese: 9.60 oz (272.16 g) (OPTIONAL)
Sure Gel: 1.44 oz (40.82 g) (OPTIONSAL BUT HIGHLY RECOMMENDED FOR WILD GAME)
Encapuslated Citric Acid: 0.96 oz (27.22 g) (OPTIONAL CURE ACCELERATOR)
I see this video is 3 yrs old and i hope by now you know you cant use encapsulated citric acid as a cure accelerator to be able to smoke the same day! You have zero bacterial growth protection doing it that way
