    Anthony Bourdain's Seafood Stew
    Serves 4-6
    1 bottle dry red wine
    1 tablespoon extra-virgin olive oil
1 green pepper, cut into ½-inch pieces
1 medium onion, cut into ½-inch pieces
7 to 8 garlic cloves, thinly sliced
    1 tablespoon cumin
1 stem fresh oregano, leaves removed
1 teaspoon crushed red pepper flakes
4 large octopus tentacles, cut into ½-inch pieces
    1 tablespoon tomato paste
    1 (16-ounce) can crushed tomatoes
2 cups homemade octopus stock, or store-bought, low-sodium vegetable stock
2 Yukon Gold potatoes, cut into ½-inch pieces
2 cod fillets (7to 8 ounces each), cut into 1-inch pieces
12 little neck or top neck clams, scrubbed
Fine sea salt and freshly ground black pepper
    French baguette, for serving
    1. In a medium pot over medium heat, add wine. Simmer until wine is reduced by two-thirds.
    2. Heat oil a large, high-sided skillet over medium-high heat. Add onion, green pepper, and garlic, and cook, stirring occasionally, until translucent, 3 to 4 minutes. Add cumin, oregano, and pepper flakes, and cook, stirring, until fragrant, about 1 minute. Add octopus pieces and cook until juices release, 1-2 minutes. Pour reduced wine into pan; scrape bottom of pan using a wooden spoon to dislodge any browned bits. Add the tomato paste and crushed tomatoes and enough of the octopus stock to cover by 1 inch; bring to a boil. Reduce heat, and add the potatoes; gently simmer until tender, about 45 minutes.
    3. Add cod and clams, and cook, covered, until clams have opened, 10 to 15 minutes. Season with salt and pepper. Serve immediately, with bread alongside, or the following day...it's even better.
    Pulpo a la Gallega
    Serves 4
2 cups ham, cut into 1-inch pieces (Jamon de Bayon or Prosciutto)
3 ribs celery, cut into 1-inch pieces
½ large onion, cut into 1-inch pieces
    1 head garlic, cloves separated
    1 tablespoon black peppercorns
3 tablespoons paprika, plus additional for garnish
    1 bunch fresh flat-leaf parsley
1 (4 to 6 pound) whole octopus, beak removed and tenderized
Fine sea salt and freshly ground black pepper
    Extra-virgin olive oil
    Sherry vinegar
1 lemon, sliced in half (optional)
Place ham, celery, onion, garlic, peppercorns, paprika, and parsley in a large pot of water. Bring to a slow simmer over medium-low heat and cook for 1 hour. After 1 hour, place the whole octopus in the stock and cook, uncovered, until completely tender or can be easily pierced with a sharp knife, 45 minutes to 1½ hours. Remove the octopus from the cooking liquid and set aside to cool.
Remove tentacles from the head of cooled octopus, and slice into ½-inch pieces.
Arrange octopus pieces in a round shape in the center of each plate. Season with salt and pepper. Garnish generously with paprika. Drizzle with olive oil and a few drops of vinegar or lemon juice. Serve immediately.

I wonder if Eric has any pertiant information at the possibilities of other motives about Anthony being killed? He would be smart to never tell if he does. You might want to zip it up if you do. You might end up in a mysterious passing. These two look like great friends. They must have talked about everything. ⁉️. I wonder if he also knew about Ava having a relationship with Anthony’s 16 year old son?

I'll be remembered as a red stain on the TV highway"... I can emphatically state, that you are NOT a "red stain on a TV Highway"; Anthony, you are a shooting STAR , we are in tears and you are incredibly missed. Self loathing leads to self destruction and self destruction leads to self loathing. What a tragic paradox Anthony’s life was. Brilliant, interesting, articulate, boldly candid but he just couldn’t stop the inner raging....and his rage had no source, no target. That’s the saddest part. It was mind chaos and will anyone ever know why or from where it originated? In the end he was such an amazing and lovable LOVABLE guy. Tremendous loss. Eric embodies purity in every sense. What a beautiful, real friend for Anthony to have had. Just feel sad watching this today. Sometimes the ending of a life can be interrupted or thwarted as easily and as simply as a moment’s distraction by an unexpected call of a visit from a friend. A second’s delay can literally be all the time and distraction it takes to redirect a despairing person’s thoughts.

15:20 Holy shit, that was unexpected, coming from Professional Chef, Eric Ripert! "You know what, it's fucking good!" I laughed so hard when I heard that

Reserve Channel, how kind & generous for the recipe especially the seafood stew as I was wondering about it as it looked so delicious while Eric spooned to taste it. Thanks!

you should watch his travel shows. the guy is hilarious. he could narrate paint drying and it would be entertaining.
his shows: The Layover, Parts Unknown with Anthony Bourdain, No Reservations, and A Cook's Tour.
And you can watch a lot of those on Hulu for free.

Even I could see it coming and of course (sadly) I did not know him. He was getting 'darker' in his last few shows. And yes. It takes one to know one.😥

I just loved Anthony. I’ve read everything he’s ever written. I’ve prepared (or tried to prepare) many of his recipes. He was my hero for many years. Even though, as a clinical psychologist, I clearly saw his dark side, I always thought he loved and appreciated life enough not to take his own life. I was devastated by his suicide. I couldn’t believe it! I still am bothered by his death. I guess he was more impulsive than I thought. RIP Anthony Bourdain. I truly miss you, especially the work you did for television. ❤

A very specific sadness, sharp and abrupt, comes over me about half way through this video when I realize that I will never see these 2 great chefs in the same room together. At first it is just 2 friends together, cooking, drinking and having so much fun, but then the reality sets in. My heart is heavy for Bourdain's loss, but it is far more heavy for those who actually/REALLY knew him. Yes, I'm speaking to you Eric, even though you may never see this. I think he was a great man because of the stories I've heard/seen, however you know he will always be a great man, for you knew him better than most. Anthony Bourdain is one of the few reasons I became a cook, and I will always cherish his memory. R.I.P. Chef. Thank you for who you were and for ALWAYS being brutally honest and wholesomely realistic. No one will ever surpass your culinary story telling.
