  • If you've ever made homemade fresh salsa, then you've tried lacto fermentation before. (No, lactose and lacto are not the same thing).
    Let me show you how to make sauerkraut, the next step in your fermentation journey!

    All you need is a head of GREEN cabbage, some salt (any kind of salt will work), and filtered water. Okay, and a jar...don't be silly 😊.
    Step 1. Rinse the cabbage
    Step 2. Peel the first layer of leaves off and put those in your Compost bin or feed them to your chickens.
    Step 3. Peel off the next layer of leaves and set those aside to use for later.
    Step 4. Cut your cabbage up into 1inch pieces (more or less) and place them in a really large bowl or pot or jar. I like to cut mine a little bit bigger because I feel it makes for a better side dish rather than just a topping. BUT THE SIZE YOU CUT IT WONT RUIN THE PROCESS.
    Step 5. Add 2 tablespoons of salt then toss the cut up cabbage leaves and salt together.
    Step 6. Let rest for 2+ hours (this will dramatically shrink the cabbage and pull a lot of juice out
    Step 7. Stuff the cabbage leaves into the jar you will be using to ferment them. (I use a half gallon Mason jar because I find that 1 large head of cabbage fits PERFECTLY.)
    NOTE: MAKE SURE TO REALLY STUFF THE LEAVES DOWN
    Step 8. Add the cabbage juice that seeped off during the resting period.
    Step 9. Take the cabbage leaves you set aside earlier and set them at the tippy top of your cabbage leaves while stuffing the out edges down to create a seal. (These will make sure the cut up leave stay below the salt/water mixture (also called the brine) and not float above.
    Step 10. IF your leaves are not covered in brine, add some filtered water until all the leaves are under water.
    Step 11. Cover the jar with a tea towel or use the lid but dont tighten it. Just place the lid on top.
    Step 13. Set the jar on a plate or bowl and Let rest on your counter for 7-14 days
    NOTES:
    Over the next few days the water level will raise and drop depending on the humidity level in your home. Just water as needed. Dont worry if the water spills over, that's what the plate is for.
    If you know what a saladito is, the sauerkraut will smell like that when done.
    If you used pink Himalayan salt, the leaves will start to turn a bit brown for a few days then turn back to the bright pale green they are supposed to be.
    If it smells kind of weird, just wait a few more days.
    If for any reason, mold appears, THROW IT OUT AND TRY AGAIN.
    It's not a big deal, it happens. If you used a plastic lid or had the sauerkraut next to something rotten then it can turn your sauerkraut bad.
