I LOVE these!!!! I hate having a burger with all the bun....this is a perfect ratio and not as heavy!!! Plus I love the texture the pita bread gets. I've been known to use tortillas in a pinch too!!!!
In China we have meat pies that look very similar. Two grilled pita-like layers with thick meat filling s in between. But the filling composition would be very different (pork, cabbage, not a lot of spices).
@@j.w.vriesde4145 Look for "Xian Bing" on the internet and that should get you started. That's the Chinese meat pie that looks like the ones here. The Muslim Chinese one with lamb is called "Kao Bao Zi". But it is more similar to an Indian samosa in terms of the crust's texture. The inside is much more juicy than a samosa, though. It is the most popular street food in the Xinjiang, where the Uyghur people are from. Both are delicious and can be prepared a variety of ways.

Made your arayes twice, and they’re amazing as always! It’s very difficult to get ground lamb where I live, so I just used all ground beef, which came out amazing. Made it again today, but realized I only had 200g of ground beef, and my local grocery store doesn’t sell ground beef, so I ended up subbing in ground pork, which also came out amazing. Made the sumac onions this time, and they’re a must have with the arayes.
Just made a vegan version of these and they were absolutely fantastic. Like a quesadilla without the hassle of folding and easy to fill up. Will definitely be making these lots. Might not ever make quesadillas again, lol

Hawawshi mix has chopped up green chilli, it's usually about 40% fat. It also has more cumin, coriander, and garlic for the Egyptian flavour profile. Oh and it's thicker!
That works too, the only problem with that though is it affects the texure of the kofta. In arayed it won't matter since there is bread anyway, but bread crumbs in regular kofta is not a great idea
You can use date honey, butt pomegranate molasses has a unique sour tinge to it. So if you have access to it you can use sumac to replicate something close.
Aweso recipe! A question: is it possible to make this with vegetarian meat (beyond or something)? Do I have to adjust for the fat percentage, if so: how?

Also, love the big brain hack about oiling the spoon for sticky ingredients like honey and pomegranate molasses.
Its smarter to just not use a spoon.. no human would taste the difference if its 1 gram more or less

You can also use cheese cloth and wring the patty like you would with the farmer cheese.

Instead of straining the meat dough, you can add a dry toast slice that dries your dough from within.
That works too, the only problem with that though is it affects the texure of the kofta. In arayed it won't matter since there is bread anyway, but bread crumbs in regular kofta is not a great idea
@@MiddleEats If you mix it thoroughly there will be no crumbs. Believe me.

@@allroundlad Nah, my Mom is lebanese and if a meat dough is too mushy she always adds some dry toast to get the dough to dry more.
