      Hi Hedi,
      How long can whole grain last? Also have you tried the mozzarella cheese or butter from Rumiano? I've been making naan style bread for years and found that the problem my family used to get with eating bread have subsided with king Arthur hard white wheat flour. I can get it at Smart and Final, the 25lb bags for only $17. Its non gmo hard white wheat. I like it better then the Montana wheat and artisan blend Bob red mills.       I just got on Azure and could not believe that we have a drop point that is less than 2 miles from my farm (sort of around the corner). I am actually the closest person in our group. Yes, you pay a small fee for the delivery - nothing like shipping would be. Also, I like the frozen foods and refrigerated items. And, they have some plant based, no milk items. Azure does not have a lot of coconut based bulk items. I am still seeking a less expensive freeze dried coconut milk source. So far, just a small amount at a time. It is hard to find without maltodextrin in it at all anywhere.

    Here is a recipe I wold like to share if I can get it to print. Three Grain Bread,
    Wheat, corn and oats. 1/2 cup all purpose flour
    1/2 cup Whole wheat flour
    1/2 cup Corn meal
    1/2 cup quick oatmeal
    2 teaspoons baking powder
    1 teaspoon salt
    1/2 cup brown sugar (do not pack)
    1 cup milk
    1/4 cup of shortening or bacon grease
    2 eggs slightly beatin
    Put the following ingredients in a sifter, all purpose flower, whole wheat flower, corn meal, baking powder, salt and sift it. Add oatmeal, and brown sugar (they will not sift).
    Bake in two 9 inch cake pans. Grease the pans with bacon grease if you have it, or use shortening. Add 1/4 cup of bacon grease or shortening to the dry ingredients. Mix the shortening or bacon grease by hand until well blended. Add beaten eggs and milk. Stir well and pour half in each of the two pans. Bake at 450 degrees for about 18 minutes (more or less as ovens may differ, just check it occasionally).
    Bacon grease is the best pan release there is.
    I have never had anyone that did not like this bread. It is a good replacement for cornbread. Enjoy!!

    I bought from LY heritage grains in North Dakota. He has incredible French Bordeaux wheat, ancient Tibetan barley and dent corn. He shipped in flat rate boxes. He is on Facebook LY Heritage Grains Little Yellowstone Heritage Grains. I highly recommend him, he is a small farmer.

      Hi Weni! I spent a few years in NH. One of the things I learned while there is that Maine was the bread basket of America Long before the Midwest and it's coming back into its own.👍 Many organic and heritage grains are being grown again! Last I heard, most of it was staying in state and bought by artisan bakers. That was a few years ago. Point is, you may be able to find somewhat local grain or flour in your area. Good luck!

    I have a similar grain mill, can't for the life of me remember where I picked it up, it was cheap, built like a tank. Running wheat berries through on a medium coarse setting produces a meal that I find wonderful as a hot porridge on a cold day. (Just add butter, milk and brown sugar or molasses.) If you want to try some interesting grains, give yellow dock or curly dock seeds a go. (We called it penny dock when I was a kid.) It is a member of the Buckwheat family, and is considered a noxious weed in most areas. Just gather the seeds (watch out for spider nests!) run them though the mill and use them with flour in pancakes and muffins. (the chaff is fully edible, but I prefer separating the grain from the chaff, it just adds a step.) I steer clear of alfalfa, as my psoriasis reacts poorly to it. (unfortunate, as white wheat and alfalfa scones used to be one of my favorites.)

    We use similar grain services here in Chile. We also have the luck that our neighbor has an organic farm and he grows wheat and sells to us. No cotsco for us but I am happy you can get your supplies met there. We have two of our Children in Seattle. Jim in Chile

    Glad to hear about the wheat from Azure. I read some reviews on their wheat and it made me hesitant to order. I’ll give them a try.

      I had not idea there were bad reviews but should not be surprised because there will always be people that complain about everything. It also depends on what they bought, if they bought feed grains by mistake thinking they would be good for their own use, then yes, they are going to be disappointed as those grains are not sorted, thus the reason they are cheaper

    Look for a local health food store near you. They are usually willing to order bulk bags of grain, rice, wheat berries and such. This saves shipping and is less packaging to dispose of.

      Yes, for people that have that option it is great. Wish we did here, I love living far away from bigger cities but being so remote is difficult when it comes to certain things

    I have had great success from Blue Bird Grain Farms. Not sure how price compares. The quality is outstanding and they will send bulk grains.They have heritage grains, ancient wheats, ad dark northern rye.

    For Canadians we have two places in Alberta. One is at Grainworks, Vulcan, Alberta and the other, Storehouse Foods is located in Lacombe, Alberta. Storehouse is my go to, as it is only about 1 1/2 hrs from me. Great prices and free shipping over $75.00 order.

    Love your vid!! Learned alot i live in kansas the heart of nature with wheat fields all around me and my wife and i dream of owning a bakery but i never thought its possible to buy grain and mill it ourselves i always thought i would have to grow our own wheat or buy a mill to get cheap flower

    I love Azure Standard. I can not eat grains so use nut flours. I buy mostly from Azure Standard for those and they have a wide variety. I have a high powered blender in which I can grind nuts in and mostly make peanut butter in.

    I had subscribed for Palouse wheat, when you mentioned (Nash's in Sequim) the other source for wheat, I canceled my Amazon order and will go out and pick up a #50 pound bag of hard white instead.
    If I can save you a full trip, I'd be more that happy to meet you halfway if you want something from here.

      @@RainCountryHomestead yes, you are right there, occassionally, we do go out to Forks, when we do we will let you know in case you need something.
      Nashe's has the hard white berries, and should have the soft when they are ready to harvest next month. #50 sack is under $40, compared to Palouse's #25 sack for $35! I never thought about Nash's as the price of their products at our health food store was so high. Thanks again Heidi!

    I'm not sure about the shipping costs but To Your Health Sprouted Flour Company sells both the whole grains and flours. Sproutpeople sells sprouted seeds to grow.

    Great video - I just started buying grain and have a NutriMill grinder. I get grains from True Leaf Market which also has other gardening supplies. When using fresh ground flour for making bread, I have heard that you need to convert the recipe unless it calls for fresh flour but have am not sure of the adjustments needed. Appreciate any knowledge/experience you have with that issue. Thanks so much!

      I have never made any special adjustments, I just got by feel when making my breads. I often use blends of unbleached white and fresh ground whole wheat and other times I use straight fresh ground whole wheat

      Azxure drops in our state, just not in our town. I do not have the time to travel to pick up my goods. Even if they delivered in our state, chances are very high that place would not come to our small and pretty remote town. Most places won't

    I need to try the soaking and sprouting method. I miss making bread so much! Not sure if it is the gluten or phytic acid that is the issue for my family. The soaking and sprouting would probably solve the phytic acid if that is the issue. I just havent taken that step yet. Too much to do and NEVER enough time! Lol

      I hear ya'! Yes, I the soaking will certainly help with the phytic acid, I am thinking the sprouting is more about the nutritional benefits that it adds but with so much to do now more than ever in my 54 years, I just do nto have the time anymore for these extra steps.

    Here in Canada we can't get hard white wheat, only hard red and the soft wheats.

      Soft white is a good one too, the only reason I do not like it as much is it goes through the mill SO SLOWLY! All your softer grains are like that. Easier to turn the wheel but just slow going through

      Be encourage and look for local resources. Do you know if your area has Community Gardens. That a resource for Fruits and Veggies for hours volunteered. At least that’s how they do in my areas when they were flourishing source of Fresh veggies and fruits.

      @@venicemitchell1407 thank you, we have looked and no there's no local garden. I have thought about trying to make one but we're in the country and most aren't interested 😒. We have reached out to so many people and most of those that say they support military and military families truly don't care once the damage is done and the uniform comes off 😢

      We are in the wettest part of this area with 120" annual average rainfall. More than twice what Seattle gets.

    Heidi, somewhere...in one of your videos dealing with flours/baking, you mentioned your version of an all-purpose flour. Was it a combo of hard white, spelt and soft white?

      Yes, it usually is though it has changed up a lot. I am currently using a blend of hard white wheat and barley.

    Doesn’t Azure have a drop point in your area. We live in Moses Lake WA and we have a drop point here.

      No, the driver does not want to come out there because we are so remote though it can be done in a loop, it does add at least two hours to the total trip just to come out here. The closest one to us is an hour away and that is the closest they will come.

    Heidi, I have the same grain mill and it takes FOREVER to grind by hand. It has really put me off. I started using another mill that does not grind as fine because I just don't have the time or the arm to stand there for an hour just to get a cup of flour. I try to grind ahead and store in the freezer. Do you have any advice on how to grind faster without power? I really like the finished product of this grain mill not to mention that it's also really pretty and in my kitchen (:D). Also, I am frustrated because we had worked really hard to live as off grid as possible with still being on grid for other purposes (living in the deep south with the need for air-condition) and my bill is STILL $250.00 a month! We have been cooking on a camp stove on the porch to try to help and all of that and it has made NOOOOOO difference. I am so completely frustrated. We have hung clothes on the line, all of this and it only knocked off about 20 - 30 dollars a month. Something is just WRONG and I don't think it has hardly anything to do with my home. I think we're getting ripped off. We're even on the saver program where we don't use any power other than the AC for the peak points of the day and it has made NO difference. I can't tell you how defeated I feel. I have been depriving my family of many different comforts to reduce our bill and it just made no difference. We have worn ourselves out trying to stay diligent to the new regime of working at reducing power to no avail. Calling the power company has produced nothing. Something is just not right. We got rid of appliances - like BIG ones all sorts of stuff and it's made no difference. Doesn't that sound really wrong to you? How can we reduce that much and it not show?

      The speed your grains grind is actually dependent on how soft the grain is. This is why my favorite is hard white wheat. By hand, I can grind the hard wheats and get a cup in fifteen minutes or less. Softer grains can take up to an hour. So I often will mix softer grains like spelt in a smaller portion with the hard wheat (1 part soft to 3 parts hard) and the hard grains keep the softer grains going through quickly. However, it takes more strength to turn the wheel with the harder grains

      No, you do not have to get them every month. You just need to subscribe and you can spread it out however you want or cancel that item at any time. I am always changing things around. I have things I get monthly and things I get every 2-6 months. If when it is coming up for the next delivery and I decide I do not need it that soon, I simply skip it. Very easy and and saves 5% to 15% depending on the item and if you have at least 5 different things coming in the same month

    Do you know what is the normal shelf life of Amaranth and Quinoa? What is the best way to store it? Vacuum sealed jars or mylar bags with O2 absorbers?

      The shelf life should be very similar to any other grain or seed. Yes, you can use jars and vacuum seal or mylar with a and oxygen absorber

      They are a good brand and I have bought nuts and seeds from them along with other items. I always check the price though. Sometimes they are far more expensive than buying through Azure Standard even when paying the shipping costs.

    @Rain Country, As of today I am a new subscriber and I'm so glad I found your channel. You are truly a woman of many talents and I look forward to your videos, new one and the older ones.
    I'm new to buying grains and grinding my own flour. We purchased our grains from www.trueleafmarket.com They have free shipping on orders over $45 00. I have no idea if they have a better price than Azure but they were lower than others I researched. This was my first purchase so I think I did ok but I may find out I paid way too much. lol
    I have a question about your mill since I still need to buy one. Does it have the natural stone grinders or is it metal or what? I've watched many videos that say to get the natural stone so the wheat berries aren't over heated and that if they do they will taste rancid. We looked at the Wonder Mill but I'm not too excited about going electric only. I appreciate any help you can give me. Thanks.

      I love this place ! This would be better then Azure because they already pre-package, PLUS free shipping to your house, except if you don’t have a grinder, then your stuck with seeds…..

      I order from Bread Beckers! They have their drop off's every 3-4 months. They are just north of Atlanta, Ga. I am a few hours south of them.

      I was just going to suggest them for those in the SE. I’ve been buying from them for 20 years. Top notch company and excellent quality. Sue is the one who told me to mill my popcorn to make cornbread 20 years ago. If you ever get a chance to attend their classes, don’t miss them. I also buy from Azure because they deliver more often and I get all sorts of items from them.

    Serious question.
    Can I buy feed grain wheat for human consumption, is there any real difference?

      Usually anything referred to as feed means it is not as cleaned as "human" food. For grains this could mean the hulls are left on, or even bits and pieces of other plant material and possibly grit

    Soaking,sprouting or souring grains reduces the phytic acid, which reduces your intake of available minerals. This happens to everyone, not just those who are grain sensitive. Not a great idea to eat grains, nuts, beans or seeds that are not soaked, sprouted or soured(fermented).

      Yes, I know all about phytic acid but i have felt no different using soaked (which I did for three years straight) or non soaked. We have to do what is best for ourselves. My time is too precious to worry about something that I do not have a issue with

      I've had the same issue. I'm on the east coast and the closest point was in another state 3-4 hrs away. I'm having to try to figure out alternatives. 😊🤷‍♀️

      I get it, as I said, we do not have a drop point that near us and it is too much of a hassle to get to the closest one as it has to be prearranged but as I said, I have still found the cost, even with shipping, to be the best. Not sure if it would be more going to the east coast though

    I bought some spelt berries. To me, they smell like corn when you shuck it. Not the greatest smell. There's no sign of mold and berries look good. Is this how they are supposed to smell? None of my other wheat berries have this smell.

    Check out Palouse heritage products they have the heritage grains I haven't purchased from them but their blog is very educational.
