I love seeing good simple healthy food that people actually eat! Instead of the garlic/chilli/ginger I use Chinese 5 spice powder in my stir fries. A little goes a long way. Sometimes I stir in a spoonful of honey at the end too 🙂
I make up egg fried rice ingredient packets for the freezer as the components become available...the cooked rice, whatever veggies I'll want to add and the meat from leftovers, even the eggs scrambled into a small container. Makes for a very quick, inexpensive meal on busy days and satisfies the sometime craving for Chinese food. Thank you for sharing ideas for meals from pantry ingredients.
I used to cook lots of store cupboard recipes when the children were younger and we were skint. Corned beef hash, eggs Essen, sausage casserole, corned beef and sweetcorn pie. They filled bellies economically and always went down well.
Hubby made a great fried rice tonight using a chicken breast (frozen), a bag of frozen stir fry veggies and left over shrimp fried rice that I had gotten for myself last night. It was yummy. He added soy sauce and he spiced the chicken.
I love how easygoing you are about substituting ingredients. We don’t eat pork but make egg fried rice with tofu and peas if we don’t have chicken laying around. It’s simple and delicious.

I use those small canned hams to make deviled ham sandwich spread..it's delicious, great for people carrying their lunches or for a quick light dinner with a side salad or potato salad.

Chill to let flavors meld. Serve on regular breads,rolls or crackers. Hope this helps it may sound odd but believe me it really is good! If you want more texture finely minced celery is a really good addition.

I really like that you showed many options to change it up, and that you didn't rush out to buy garlic and ginger because everyone says that MUST go into a fried rice dinner. You kept it real and made do with what you had on hand and I'll bet it was delicious. A fried rice dinner is one of my go-to options for using up the bits and bobs we have on hand.
Well guess who will make some fried rice soon! No tins of meat but I have some frozen cooked chicken I can use and some veggies that are looking a bit tired. Great video as always!
I love these leftover, us up what you've got recipes. I would love to see these once in awhile. Thank you. Also, I sometimes make extra rice on purpose to make a fried rice meal. Tofu, pressed and fried makes a good vegan sub. It takes on the flavor of whatever marinade you use.

I love fried rice for any meal. My children loved it for breakfast with scrambled eggs and cheese melted in. You can add whatever meat you have leftover. Really good with fish. Thank you for all your great content.

That's how I cook often too. My coworkers say that looks and smells so good and want recipes. Uh...ratios of protein, carb, veggies and flavor add ins I like. Haha. Sometimes it's themed but sometimes it's just whatever I have on hand.😂

I happened to have frozen pak choy from my garden in the freezer, a jar of home canned pork cubes, and a good hunk of fresh ginger, frozen red, yellow and green peppers, plus the other ingredients. I don't remember if you used some sesame seed oil, but I saw it in my cupboard and added a dash of that.

I have an induction hob that I also hate with a passion ! making sauces or slow sauteeing is a nerve wracking experience ! everything sticks at the bottom - i got on insurence to replace a broken hob and I loved the fact there was no knobs - just a wipe clean surface - paying the price for being lazy
I've been using induction for a few years, and have found that it's important to buy one that has small intervals for power/heat (i.e., lot of power/heat settings). That means paying a lot more than I did for the cheaper versions I first bought--those only had 5 or 6 heat settings and were only really useful for boiling water for pasta, etc. I can get a very low heat now.
spam diced, chop a small head of cabbage, 1 onion, 1 bell pepper, 1can of tomatoes ( undrained) , fry up together.. grew up on that.. give it a try.. salt and pepper to taste.
My youngest grandson loves egg fried rice , when I make the fakeaway he always says why don't you go and work with Mr Chan ? nannie , Im sure you could get a job there 😊that's the name of the local Chinese chippy.
I keep fresh ginger in the freezer, peel it using a teaspoon then freeze. When I need ginger I just grate it in a a fine grater and throw in the dish. I’m sure that garlic could be minced/ grated and frozen in a small ice cube tray to be used the same way as it wouldn’t take long to defrost once in the dish. I haven’t done this as my husband doesn’t like garlic - shame ☹️
Looks good Jane. We often fry left over boiled potatoes so I will tip the eggs in near the end and cook like you have done and then add baked beans and heat them too. Sometimes we use corned beef or bacon or sausages or toss in left over kale, cabbage or shredded sprouts. If it ain't nailed down it gets fried and it's always tasty. Please will you tell us why you hate your induction hob? William has suggested we change to induction when we revamp our kitchen but I honestly know nothing about them.
I make fried rice in my instant pot, but not very often. Yours looks so good! I can practically smell it cooking ; right through the screen ;) Now I want some. I add a tablespoon of sesame oil to my fried rice at the end, as was suggested by my instant pot recipe. It adds a lot of flavour for an ingredient used in such a small amount. I never make fried rice without it now.
I only ever use ginger powder. Fresh ginger goes to waste in my house; I don’t use enough of it to make it worth while to buy, and it goes bad. I’ve always been happy with the result.

I would definitely advise you to get an air fryer. They are game changers in the kitchen and not as expensive as they used to be. I also am a senior. I have had an air fryer for about a year and a half now. It has a pretty big basket (it will accommodate a 10” pizza crust,) and I use it *at least* 4 nights a week. It makes an adequately sized meal for 2 hungry adults. I mostly use it for meat: pork chops, the *very* occasional steak, and chicken breasts, legs, or even a whole chicken. And 5-minute homemade pizza! There are lots more uses for it, too, but I’m not a very adventurous cook any more. I stick with my “old reliable standards” that I’ve been making for years. That being said: I do want to try baking Jane’s hand pies in there though!
I am vegan and I'd probably use the packet of silken tofu, that I always seem to have in the cupboard and forget about, broken into largish lumps and sprinkled with a dash of turmeric for that eggy colour.
I am making lentil burgers today. Egg Fried Rice is a favorite in this house - very healthy, and a great money stretcher. Thanks for these excellent videos!

The canned hams can be kind of salty. If you slice it and boil, then rinse it off the saltiness mostly goes away.
