For Indian food always ask to be made in ghee or butter. They reuse cooking oil again and again. It kills your organs.

The grandma will even come to each table and talk to you, ask how dinner is and how your doing. Perfect food, but they named it taj palace. Those other cuisines: Italian/Brazilian/Mediterranean wouldn't have the same range as true Indian food. Because India spans a wider range of climates and cultures- it has historically seen multiple waves of invasions and migrations - that the ingredients and ways of using them are naturally going to span a wider range.
What you think of as "Indian" food is in reality only Punjabi/Mughlai cuisine with a dash of Afghan and Persian. True "Indian" food is a much broader range
Have you even heard of Dhokla/Mysore Pak/Kori Gussi/Rasam/Hyderabadi biryani, or any Bengali foods, etc, to name just a few?
That said, my own favorite is Thai!

When someone said darbar, I recognized this as Minneapolis and the correct answer for the area. Hate on white peoples’ palates all you want, but white people who eat Indian food in Minneapolis have usually tried a bunch of places and do actually know.

White people can't even eat authentic indian food because of the spice. What you get in the west is toned down version according to their pallette. Dont believe me? Come to India and try.

This is something you can see at most Indian restaurants that serve “Curry-N-Hurry” style rush lunch meals or buffet. Their flavor profile for that Tikka during the lunch will taste completely different from the one prepared for single dinner serving.
