- Ribs are my favorite way to break in a new cooker, and that’s exactly what I did, rubbing up 3 racks of St. Louis Cut Spareribs and smoking them with hickory wood on my new 20x42 Lone Star Grillz Offset Smoker. Some amazing BBQ sauce made by my neighbor was the perfect finish for these pork ribs.

Great looking ribs and nothing better than a offset You may want to remove that top grate from the fire box so that it doesn’t get burnt out and get coated with soot , Keep up the great videos

Nice job, Ry. I'd definitely eat some of those; even for breakfast. Something I don't think I've seen is reverse-seared steaks on one of those Lone Star Grillz. It would be easy to sear right on the firebox griddle, I would think. Stay well.

Beautiful ribs Ry and I’m sure that rub and neighbor carols JD sauce were good! Looks like the lone star held temp really well on a few splits. It definitely seems like a great grill from what I’ve heard, can’t wait to see you cook on it more. Excellent job my friend, hope you’re doing well!
I'm very, very pleased with how efficient it is. I'm going to have to try to really crank up the temp on it and see how much wood it eats :)

That's the best mid priced smoker the pipe will last longer. And you can get the 1/2" firebox on the pipe and that will last forever.
Man I wish I could get a lone star! Love the channel, keep it up. My Two favorite bbq channels are Malcom reeds how to bbq right and yours.
Texas style brisket and pulled pork for the next cook. Utilize all that room and you can feed the neighbors :)
Great video! PLEASE do a rib comparison video (not so much for a winner but the subtle differences in taste using the two different cookers). The PBC vs LSG. I would buy a pay per view to watch that showdown haha~
I'm not really into the showdowns. Part of that is that filming them by myself with multiple cameras is insane :)

I used four splits and that thin starter piece at the beginning. I'm finding it's a very efficient cooker in that 225-250 range :)

On ribs I'm never to concerned with smoke ring, though it's nice to look at. This was minimal :)
Awesome cook and so happy for you getting into offset cooking. Is hickory easy to come by in California? I can't get it here in Minnesota. Really a bummer.
I'm really fortunate to have a local supplier that has almost everything :)
Ry, did you get the new fire management grate yet? I really like it. Using half splits it's really easy to maintain temps. It seems to save a little on wood too. I have two racks on as I'm typing. :-)
I do have it but haven't used it yet. I'm already liking how efficient the smoker is even without it :)
Now you can get that 26" Weber and a bunch of accessories with the money you were going to spend on a new offset.

You can actually fill the bottom of the smoker with several gallons of water. I decided this time to not do that to see how it performed without any added water.
Great looking ribs, have you checked the grate temp for hot and cold spots for even cook temps ?
Just spot checking for tests and it's within 15 F which is really good in my opinion.

Good video. Did you use any water in the pit? I had to laugh when you said that next time you would leave the ribs on for a little longer. That was exactly my feeling when I cooked the first batch of ribs on the LGS Adjustable. The bite was right, but they I would have liked them to be just a little more tender. Will Carol give you her recipe for her Jack Daniels BBQ sauce so you can publish it?
No water this time. Wanted to see what the cook would be like without any, but next time in similar weather conditions I'm pretty sure I'd put a couple gallons in there. And Carol's recipe is her closely guarded secret :)

You can actually add water to the bottom of the cook chamber, but I didn't this time just to see how it would work. Next time I think I would :)

Looks great Ry. How do you compare the mango chili ribs on the pellet grill to this cook? Is the lone star worth the extra $1000?
You're always going to get better wood flavor with a stick burner, but the pellet has convenience going for it. For me it's also about the capacity and the experience of cooking with burning wood. Nothing quite like that.

Hey Ry, is that the 20x36 model? Can you also use coals for grilling? Nice smoker and excellent looking ribs!
It's the 20x42, and you can open the firebox lid and use the grill grate that's at the top of that to direct grill over the fire.
Nice cook Ry! Got a question, did you notice the bottom of the ribs close to the draft get much darker than the rest?
Actually no since this smoker is designed to cook top to bottom the way it drafts. Very interesting.
Hey Ry how much wood and charcoal did you use compared to the oklahoma joes? I'm sure the new grill is a little better as far as heat containment right?

Ribs tend to be forgiving in a fairly wide temperature range, so if you can manage 225-275, even with some swings, they're generally going to turn out good :)

May I ask why you spritz with just water instead of a 1:1 ACV to water mixture?
I try different things, and most of the time I don't notice much difference between water and anything else, unless it has a very distinct flavor.
I see you have removed the skirt. What's your recommendation on that? I have done both and find that when I leave it on the ribs are much harder to cut into.
These were pre cut and trimmed and I do prefer them this way 😊

How much wood are you going through with that LSG? I hear they are very fuel efficient. 1 split every hour?
About 1 small split an hour for 225-250. I've been really impressed with the efficiency :)
