I was a butcher for 13 years in the 60’s and 70’s. I was trained to sharpen knives by butchers trained in the 30’s and 40’s. Put a damp towel on the block. Put an oil or wet stone on the towel. Start with course, medium, and fine stones in sequence. I also learned to make sausage and sharpen knives at Metzgarei Hanse Bart in Uber Grinau, Bavaria, 1965 and 66. The skill is to maintain a steady and correct angle. I didn’t learn how to do that overnight. I see the value in a tool that can maintain a steady angle. 😅
@@2guysandacooler - if we can make a potentially healthier salami without nitrites, then can we substitute some of the animal fat with vegetable fat, to possibly make it even healthier? (I don't mean substitute all of the animal fat, but just some of it)

Hello Eric. I have an old knife sharpener. The jende sharpener looks like the right knife sharpener that would help me up my sharpening still. I have always struggled to keep my angles when sharpened my knives. The jende looks like the perfect fit.

Yes! Another season of celebrate sausage. Regarding the Jende system and my knife sharpening routine. We basically just have one of those cheap, pull the knife through sharpening tools. Its not perfect but it does OK. Would really like the Jende system. I have a sharpening stone but keeping the correct angle is difficult. With this I could "refresh" our knife drawer by sharpening our ever growing pile of dull and chipped knives.
I bought a "Chef's Choice" Trizor electric sharpener for my 30-yr-old Henckels, but it didn't play well with the thickened heel of those blades; this Jende system looks like the perfect solution! Just bought the ingredients for your Cajun Green Onion sausage recipe, can't wait to try them!
I just started sharpening knives with wet stones. Keeping the proper angle is the hardest part. This sharpener takes care of proper angle. Sure looks like a better way to keep knifes sharp.
Love everything Salami and sausage!! My knife sharpening is pretty simple, and not the best. I just use a flat stone without a guide, or I use my 8" table grinder. So its a pretty rough job. That sharpener would be a game changer.
i actually really suck at sharpening knives i give them to my son in-laws to put an edge on them for me lol, having one of these I think even i couldn't stuff it up !! Congrats on the new series looking forward to watching it.

My sharping system is an adjustable guide for my little 1”x30” belt sander and I use a variety of belts up to 1000 grit and then a strop with some green compound of it. It’s not great but it’s better that doing it by hand. That Jende guided sharpening system looks amazing.
That Jende jig looks great! I tried using water stones to sharpen my knives a few years ago. Took me hours and haven’t properly sharpened my knives since.
That sharpener system looks really nice. I use a Japanese water stone to sharpen my favorite knife and for the rest I use a diamond whetstone. It’s a learning experience for aure
Outdoor enthusiast learning to make sausage with my grand daughter. We process our own wild game and locally raised meat. Showing her where our food comes from. If all goes well maybe introduce at rural microbrewery. Local, local, local :) That said I have used whetstones etc. to sharpen my knives with varying results. That Jende system looks like it will do the trick and is repeatable. I could sharpen night before and end of processing so they are sharp for next session.

Hey, Eric! I'm super excited for CSS4! I appreciate that Jende is kicking in one of their guided sharpeners for the cause. I make many of my own knives, and I have a Work Sharp powered sharpener that provides a decent edge, without a huge amount of effort. I like the Jende, in that it requires no power, and it should produce a dead flat grind with much more consistency. I suspect I can modify a mill file to fit in the sharpening stone holder, and use it to shape the original bevels on my knives with that same consistency. Here's hoping I'll find out!
Great to see the return of Celebrate Sausage month. I would love to win the Jende sharpening system. I do a lot of home cooking, bbq, smoking and sausage making, so I would welcome the more accurate sharpening that Jende would provide over various hand held sharpeners that I’ve been using.

Time for another season of sausage! I have a lot of knives and i don't have a sharpening system. Don't want to go hog wild with a whetstone, the Jende looks like it may be a great option instead of packing all my knives up and paying someone to sharpen them for me. 👍
Interesting. I make my own sausages but haven't been game to try fermented meat products yet. I can make good beer and spirits though with long fermentation. I've been keeping things sharp for almost 60 years having tried a variety of tools. What I have used for the last couple of years is wheels made of MDF fitted to an 8" grinder. I use valve grinding paste on one wheel and metal polish on the other. Almost no material is removed and the edge is long lasting.
That's an interesting alternative to nitrites/nitrates. I'll have to give it a try. As for the Jende sharpening system... All my knives are dull. Looks like the easy solution.
The only sharpening system I have is on the back of a can opener lol. I am just getting started with making sausage and would definitely benefit from a knife sharpening system. Love what I saw with the Jende system. Will definitely be looking into it when I can.
I have gotten into trying to make some sausages, I have had good luck with your Lap Cheong recipe but cutting all the meat was a pain, I keep my knives as sharp as I can but I only use an old fashioned whetstone and have problems always maintaining the correct angle, That system you have there and showed is amazing,
I think I have watched every one of your videos! I love the information I'm getting and the tips. I got most of my knives when I got married 56 years ago. I try to keep them sharp mostly with a rod. I do have some Ulu knives and I wonder if they might work for cutting up meat for sausage and if anyone has tried them?
Love watching your videos, they never fail to give me the hungries. I have a Lansky. Although it works fair on pocket knives, I don't even try it with my hunting or kitchen knives. I just use the old whetstone that my dad gave me, in the two piece wood box he carved for it. Needless to say I've never known what its like to use knives as sharp as yours. It would be wonderful to slice through meat instead of sawing through it.
i sharpen razor sharp edges with just a wet stone and diamond plate been butchering since i was 11 still took me ten years to get the steady muscle memory to do so. recommend guided sharpeners unless you got spare ten years

Very excited for this year's celebrate sausage series. I will enjoy it more with some sharp knives 😂. I've always wanted to use stones, but, afraid I'll get the angle wrong. First of all i want to be clear I'm still an amateur and probably am doing it worg but right now im using a 220/1000, and a 4000/8000 wet stone, i whold love to be able to sharpen my knives un less then 3-4 hours with a consistent angel!

I can keep a fairly good edge on my knives with a stone. But I can’t keep the same angle with every pass. That’s why I think the Jenda sharpening system would be a great addition to my set of tools. Love your videos
I just set up a new home meat shop. I sharpen my knives by hand with stones. The problem is keeping the right angle of the blade. The Jende looks like it would be really nice for the angle of the blade to keep it true. Looks like a great product.

I currently only have a cheap plastic sharpener I got from Walmart. It does work but not very well, so by having the jig from Jende Industries would put me on top of the world.
Thank you for this and all of your videos! The only tool I have to sharpen our knives is the plastic sharpener tool with ceramic in it. Works, but not well.

Season 4 ! I'm ready. My sharpening system is sandpaper laid on a thick piece of plate glass, and sharpening by guess. It works....... sort of. Jende would work a lot better.
Love your videos. They are very informative. I have tried many times to use sharpening stones, but I just can’t maintain a consistent angle. I now use a Chefs Choice model 1520, but the wheels seem a but coarse to get a real smooth edge. The Jende system would solve both problems. Thanks a lot for your channel, Mike J

I just purchased some new Japanese knives that I want to get a sharpener for. I have looked hard at the Jende sharpeners, luckily I haven't need a sharpen yet. I will need it soon though!
I sharpen my knives by eye, and with a steel. While they don't come out in as way as sharp as the knife you showed at the start of this video, they seem to work fairly well for me, but I'm always open to a new way that works better and is easier. Thanks for the video, cheers.

Getting the angle right on any sharpening system is my PITA. Having something like the guided knife system would really help me keep better edges.

40 years I'm still using the steel and my Dexter Russell knives and tri-stone!

That is actually the best sharpening jig I've seen, if it can do larger knives I have several pieces that would become manageable.
I agree. It's solid stainless steel and built like a tank!!! Works great on the larger knives.

looks like a nice sharping system would love to try it out. I use a honing stone for my knifes now.

My sharpening system is sandpaper laid on a thick piece of plate glass, and sharpening by guess. It works....... sort of.
Jende would work a lot better.
Love your videos. They are very informative. I have tried many times to use sharpening stones, but I just can’t maintain a consistent angle. I now use a Chefs Choice model 1520, but the wheels seem a but coarse to get a real smooth edge. The Jende system would solve both problems. Thanks a lot for your channel, Mike J

I only have a handheld sharpener. The Jende sharpener system would be a high improvement on sharpening my knives.

I don’t have any sharpening “systems”, just a bunch of waterstones that aren’t a lot of fun to use!
Eric, thank you for all the videos you post I learned so much. I bought many different kinds of knife sharpeners, but I do not get the sharpness I would like a get like slicing a piece of paper.
I like the idea of having the alternative of not using nitrites if you don’t need to. Great lesson! I use a three sided wet stone.
We process a couple hundred pounds of pork, beef, and wild game each year, and the JIGS would be a game changer!

I just purchased some new Japanese knives that I want to get a sharpener for. I have looked hard at the Jende sharpeners, luckily I haven't need a sharpen yet. I will need it soon though!

I sharpen my knives by eye, and with a steel.
While they don't come out in as way as sharp as the knife you showed at the start of this video, they seem to work fairly well for me, but I'm always open to a new way that works better and is easier.

Always enjoy the instructions, would love a decent sharpener as well.
I use a 1000/6000 grit whetstone. The jig can help to maintain the angle of my edges.
