In xinjiang China, we have something the same as the barbacoa, which is made of the parts from the heads of cattle as well. But seems like there's so much difference between them, because only very few people enjoy ours and they said it's supposed to have strong meaty scent that most people can't stand. 😂 So I'm just curious,how's the barbacoa taste like?lol can't wait to try😂
There does seem to be many variations of barbacoa, but we have enjoyed all so far and look forward to trying the version served in China. So far, we feel the barbacoa in the U.S. has a more mild flavor, but the one we tried in Mexico had a stronger meat taste to it, perhaps similar to what you are used to. That said, we feel the version we tried in Mexico was cooked in the most traditional manner that we have tried. Hope that helps and curious what your thoughts will be when you try it 😀

Tequila is made of blue agave just from Tequila, Jalisco and agave is made from different kinds of agave from any part of the country, and it could be spicy with more stuff or made it like cream with fruits
Btw the vanilla is a plant cultivated and used from centuries in México. Is one of the most expensive spice, so much that is probable that the most of vanilla food we have ate is not really vanilla, instead chemical flavor because is very popular and lots of dessert used it but if we're with natural vanilla would be more expensive.
Chicharron comes in two varieties, Cascara and Carnita, cascara is the one you tried, very lean, just the rind, carnita comes with a fatty piece of pork attached.
The food looks so good it's making me hungry .That large piece of Chicharron that you bought you can break it into small pieces and at it to Top Ramen soup for extra flavor I've done that before with spicy Chicharron so good.

The water you though was cranberry juice was most likely Hibiscus. There are several aguas frescas but the Hisbiscuis, Horchata and Tamarind flavors are your standars flavors out there.

they are not called nachos, they are chilaquiles, they are maded from totopos/tortillas chips as you said, but nachos is quite "american"/"tex-mex" term I think. I think we mexicans only eat nachos at the cinema, is not our main meal :-)
You are right, nachos is definitely an American term But the chilaquiles were incredible and way better than any nachos I ate growing up. We ate chilaquiles every day we were in Mexico City and loved them.
