    You can see a different version of the cake (using less sugar) here ua-cam.com/video/JkAsoQa22zI/v-deo.html Here's the original recipe I made this recipe for the first time back in August 2009! Helen Corbitt's "Another Apple Cake"... As I mentioned in the video is it SUPER sweet so feel free to halve the sugar (or use even less...). You could also add cinnamon or other spices to change it up.
    Mix together
    ½lb sugar / 225 g
    6 fl ozs vegetable oil / 170 millilitres
    1 teaspoon vanilla
    1 egg
    juice of ½ a lemon (not essential)
    ½ teaspoon salt
    Mix in
    6 oz flour / 170 millilitres
    1 teaspoon bicarb soda
    6 ozs (2 medium sized) cooking apples, chopped finely
    4 ozs walnuts (I don't use them, don't like nuts in cakes!)
    Pour into a buttered angel cake tin with funnelled base. Bake at 375f, gas mark 5, 175 celcius for 1 hour or until a skewer or cake tester comes out clean.
    Serve plain or with lemon glaze (4 oz sugar with 1 fl oz lemon juice, bring to boil, cool and pour over cake).

    Just love and admire your attitude about cooking/baking...."just use what you have". 😁 You give us all permission to just relax and don't worry about perfection. That is sooo difficult for me. I love to cook/bake and am noted for being a good one. Truly a blessing and a curse.🥴 I could be several sizes too large. 🤣 I'm careful not to overindulge. I always feel pressure to make everything delicious and "perfect". I've learned to tell myself and family/guests "we'll hope it good, fortunately it's not our last meal". Lightens the mood and helps me relax.

    Oh, those sweet note cards. I have a love for notecards and always had joy in finding stationery sets (as we called them)as a child. Okay, so 225 grams of sugar is equal to 1 cup of sugar. And 170 grams of flour is about 1 and 1/3 cup of flour. Taking notes here...I only understand cup measurements. I wish we had mature apple trees. How great that you do! DH loves apples but he does not care for cake. I do not love apples but love apple cake :) I love only english walnuts (no black please) but I do not like nuts in cake either. Mmmmm Your recipes always make my mouth water. A Hygge Fall recipe in perfect timing. I love your recipe videos~Thank you~

    This is why fall is my favorite season We have 3 apple trees so I have been making goodies I used to bake an apple cake very similar to this will find the recipe and will make tomorrow The smell of fall apple cake in oven the smell of cinnamon, clove, pumpkin scented candles make my days plus the cooler temps Love your clothes swap parties

    Thanks for sharing! When you mentioned the cheese it reminded me of a traditional way of eating apple pie in Vermont. They put a slice of cheddar on a warm piece and it is delicious!

    Wonderful, Diane! I have been watching you since I "met" you through DYT, I watch your videos while I eat my breakfast smoothie bowl and then go do my Fly Lady routines :). I laughed out loud when you said you were going to make a PUPA - in Polish, your pupa is your bahookie :)!!!!

    ❣Hi, Diane, thank you for sharing, I love your clothes swap parties, last time we got the wonderful cake of the fishers wife, this time apple cake ...I've one egg and some apples from my neighbor, something to look forward tomorrow morning...of course after the routines😉. I always use whole wheat flour, turns out wonderful. Haha, and i always LIKED walnuts, especially just on examination days, BECAUSE they look like brains, I thought that would help my brain...     Apples and cheddar cheese is a common snack here in the States. I would add a maple glaze rather than icing. I have made this one several times.

    A little cinnamon in the batter would be good. I used to make a cake like that I think in a bundt pan. I should find that recipe, it has been a long long time since I made it.

      I was just thinking that I don't think I've ever seen a apple cake that didn't have cinnamon in it...I'm sure it's good anyway! Yeah, I would decrease the amount of sugar as well !

      I love fall and my daughter and I actually vacationed in Copenhagen last Sept/Oct. This cake sounds wonderful. You can substitute apple sauce for the oil, which will make it extra moist and healthier.

    Your apple cake looks yummy, Diane and the Scottish cheddar sounds perfect! We love a good cheese, but storing it is always a challenge. Do you have any suggestions on how to keep the cheese from getting too hard? Blessings, my friend...

      Walnut whips are now sold sans walnut and just called 'Whips'. I have seen them with my own eyes.

    Thanks for sharing your beautiful home, ideas, traditions, and especially for the Flylady videos - I was NOT born organized! I just came across your apple cake recipe. I have apples that really need to be eaten soon & this looks perfect. However, I don’t have an angel food cakepan. Any suggestions?

      Hi! Did you watch the video? I used an ordinary cake tin. Doesn't need to be an angel cake one with a funnel 🖐😃

    It called for lemon glaze. Did I read that right? So, at what point did you use lemon juice? Do you think lemon glaze adds or detracts?

      You can put a lemon glaze on the top of the cake but I prefer it plain or with white icing. Your choice!

    Looks delicious! Reminds me that I need to do something with my apples (besides letting the deer eat them all!) Do Danes use cardamom a lot in recipes, or is that more of a Swedish thing? Ha- I used to have some of those personalized note cards, but mine had Holly Hobbie and Ziggy on them! 😄

    What diameter and height was your cake tin? Thanks so much for sharing this fall dessert. Hugs from the U.S. I thought i remembered Helen’s history and looking up the recipe online I remembered she worked for Neiman Marcus providing recipes and menu items for their restaurants.

      I'm not at home right now but it's my standard IKEA tin which, if I remember correctly, is 20-22cms. And about 7cm high.

    How did you guess 170 grms if flour? Donal Skeehan, Irish Chef with a Swedish wife makes this cake, called Sweedish Apple Pie. ❤️
