    Tibok - tibok originated in Pampanga made from carabao's milk.
    It has a soft-jelly like texture and topped with latik.
    The name tibok-tibok literally means "[like a] heartbeat". This is due to the method of determining if the dish is cooked. Once it has reduced to a firm consistency, the bubbles barely break the surface, making it look like it is pulsating.
    INGREDIENTS:
    2 CANS COCONUT MILK (LATIK)
    1 LITER FULL CREAM MILK OR FRESH CARABAO'S MILK
    1 CUP COCONUT MILK
    1 AND 1/2 GLUTINOUS RICE FLOUR
    1 CUP SUGAR
    1 TBS LEMON RIND - OPTIONAL
    1/4 TSP SALT
