I just scored 20 pounds of dried lima beans out of the "clearance" shelf at the local supermarket for $.69 cents per pound. Very happy to have some RECIPES to use them up!
I grew up on beans, lima beans as one of my favorites. I now grow several varieties of beans. Corona beans are probably the largest lima I have ever grown, cooked and eaten. They have become my absolute favorite of all time. Biting into a corona bean is like biting into a bean steak! Heavenly. Thank you both for such a delightful series.
The other day I found 3 bags of lima beans we grew and I put in the freezer in 2017!! I cooked up a bag of them in the Instant Pot with some bacon ends for 7 minutes, seasoned with salt and pepper. They were WONDERFUL!!
That lima bean and ham soup reminded me of my grandmother and brought back fond memories. She was originally from North Carolina and she was a wonderful southern cook.
We were raised eating beans. My brother always tells me how poor we were but I think he got that idea from his wife. His wife had a mother and father in the home and they had more than we did, but we were alright. My mom worked and our grandma stayed home with us. So we ate beans most of the time. We had pintos, limas, black eyed peas mostly! I love them all but the Limas seemed special! I will go see if I have some now!

I was raised eating beans of many types as a regular part of my diet. Whether or not my mom saw a bean based meal as a boost to the family budget, I will never know. It was just a way of life just as a chicken dinner on Sunday was. Yesterday I prepared a pot of pinto beans with smoked turkey necks, and it was served with rice and collard greens. I have different types of beans in my food pantry: Great Northern, black eye peas, 15-bean soup and more. Beans and rice make a complete protein; they are a very healthy meal option!
I love them! I normally cook them till easy to prick with the doorknob. Then put them in the oven with tomato sauce, diced onions and celery, a few bay leaves, chopped spicy banana peppers for heat, S/P in the end. and cook them till soft and no water left in the pan. This should be a thick sauce. They are so good! Growing up we had them at least once a week.
My Lima bean seeds are sitting here waiting to be planted this coming weekend . I think liking limas must be regional. When I lived in coastal NC, it seemed like everyone grew them and they were readily available at farmers markets. Here in eastern TN, I don’t think anyone (but me) grows them. One of my favorites, fresh or dried! Your pasta salad looks delicious 😋

1 of my favorite ways to use butter beans is a take on Roosevelt Beans served in Yellowstone NP. I take a can of baked beans, add 2 C cooked butter beans, half a diced onion, and half pound ground beef. So delicious and easy
I love fordhook limas-they are naturally butter flavor. I get them frozen. Cook as a side dish-they cook in 15-20 min. Salt and pepper and if I really want to be in heaven, some unsweetened cornbread….yum!!
Here in Mississippi we call them butterbeans. 😋 The best way to fix them is the way you did with the ham hock. Don't be afraid to add another one. Sometimes I add some onion. Serve over crumbled cornbread. Pure comfort food. The shrimp and pasta salad looks delicious 😋 And the dip could be a good substitute for hummus (not a fan of chickpeas). A much-loved aunt, now deceased, used to ALWAYS have a bowl of large lima beans, cooked with a slice of fatback/salt pork, on the table; lunch and supper. I cook mine just like that; a cup of dried once a week, as a sort of tribute to her. The small, baby ones I'm not such a huge fan of. The texture is always weird to me; kinda powdery and paste-like at the same time. Ick. Although, I may try that dip recipe; dips are sort of paste-like anyway :).
I love baby limas and eat them in the summer with various other vegetables in a succotash. Limas with corn. Limas with corn, and yellow squash, etc. But those recipes look very enticing!

An elderly southern lady told me not to stir limas until they are almost done to prevent the shells from coming off the beans and do not add salt until later in cook time. She said adding salt made the beans take longer to cook. And we southerners are correct, you need cornbread with beans to soak up that amazing pot liquor which is also what the juice in cooked greens is called.

Thanks for an excellent video. The shrimp salad is totally up our alley. New dish for summer bbq's or pot lucks. All three look great. Why is it that the grocery stores and even little meat markets are not selling ham hocks, beef soup bones or chicken backs? Several years can't find. What do they do with them? Soup kitchens, pantry's, restaurants?
I finally was able to get to chef's store you recommend. What a treat. Able to stock up on flour and yeast and get a feel for all the goodies they carry for another day.
My dad was raised on brown beans. A lot of times thats all they had 3 times a day. I like lima beans, hubby not so much, so its hard to get him to try different stuff. But the 1 with shrimp he might try. Love the bean section!
I love ham and lima beans. Mom always cooked a whole ham and made the limas just like you did. We loved chopped onion garnish on top and a thick sauce. The limas I ordered are even larger than the ones you have I had to search and finally found some.

Second recipe is succotash Whole kernel corn Fresh or frozen baby butter/lima bean Okra Cherry/grape tomatoes Onion Bell pepper Salt and pepper Also we love navy beans with ham hock you should try that too.
As kids we hated Lima beans. How did Mom get us to eat them? She made them into homemade baked beans. For family reunions it was always requested that Mom make the baked beans. She had an extra large roasting pan (twice the size of a regular dark blue speckled roasting pan) as part of her Lifetime cookware set, she would use this to make the beans for the reunions.
I can’t stand the big butter beans but love the baby Green lima beans it’s the reverse for my son he and my Dad loved cornbread and butter beans. I’m a southerner and use fat back or ham hock. 🙂 Great video.❤️

That was so fun! I can't wait to try all of the recipes. I never liked the big lima beans when I was young, so I have never tried them as an adult. I have seen that the large ones don't seem to can very well. So I will try some dry without soaking. I was glad to see both dishes from the green ones. Once I saw a recipe using the green limas to make quacomole. They were chunky blended, then seasoned with the seasonings you might put into a regular guacomole. Each dish looks so yummy! If you have grown beans you will find when they are fully mature they change color. Some will be red beans and some white beans even spotted beans. You can eat them as green beans when they are immature.

You can get several different varieties of lima beans seeds at a number of different websites like migardener, sow true seeds, baker creek, southern exposure seed exchange, etc.
@@berryhappy4883 Test them. Get a paper towel damp and put the beams in it and in a covered container or plastic bag and see if they send roots out. I have used some of the bagged beans to grow and have had good luck but sometimes they are too old. I would think you should see roots in at least 2 weeks. If not they are too old.

Love this series. I recently discovered Mayocoba (aka Peruvian) beans. They’re wonderful! I haven’t researched their nutritional facts, but definitely adding to my food storage. ❣️
I love lima beans, butter beans, or any other name you can think up for them. My personal favorite is dried baby limas. They seem to have thinner skins. To sort all kinds of beans and lentils, I spread them out on a cookie sheet where they are easy to view for any debris. If my bean liquid is too thin after cooking, I use an immersion blender to puree some, then put them back in the pot with the others. Rather than having mushy beans, mine are more often on the too-hard side. I have learned to counter that with baking soda in the soaking water which I drain, then add more to the cooking water depending on the age of the bean. Glad to see you making a bean dip. Most people are familiar with hummus which is a great place to start. I have learned that any kind of cooked dried bean can be used in place of chickpeas which are customary. In fact, 2 days ago I made a bean dip with cooked died limas, and last week I made one with navy beans. In fact, the navy beans were overcooked so they were perfect for a mash. Thank you for educating people.
I make lima bean and ham soup often but I always add some onions and celery with a bay leaf. So delicious. I also stir it often to get the thicker broth.
I love Lima Beans! My roommate in college-Western Kentucky University- got me hooked on them back in the 70’s. Everyone always commented on what we cooked in our community floor kitchen! Limas were always part of it. Thank you. Going to try these recipes. I think you’re great!

Next time in your large Limas, add a Bay leaf and a little minced garlic. We substitute a smoked Turkey leg for the ham hock as we don’t eat pork. Yummy.

Large Lima beans that are cooked and then roasted until crispy in the oven or air fryer with seasoning is a yummy snack!
Beans are such a good food storage. If they are stored right they work for food as well as seeds for your garden.

You need cornbread made with buttermilk with those beans!

With the excepton of Quinoa, grains, legumes, seeds ARE NOT COMPLETE PROTEINS... Your body needs complete proteins.

May be good source of iron but it’s not heme iron so it’s poorly absorbed. Organs are great for well absorbed iron as is muscle meat.

In fact, 2 days ago I made a bean dip with cooked died limas, and last week I made one with navy beans. In fact, the navy beans were overcooked so they were perfect for a mash. I make lima bean and ham soup often but I always add some onions and celery with a bay leaf. So delicious. I also stir it often to get the thicker broth.
I love Lima Beans! My roommate in college-Western Kentucky University- got me hooked on them back in the 70’s. Everyone always commented on what we cooked in our community floor kitchen! Limas were always part of it. Thank you. Going to try these recipes. I think you’re great!

People rib me asking why I go through the bother - but I know we’ll have easy, nutritious meals at the ready “just in case” or on those days my chronic pain doesn't leave me much energy. Next time in your large Limas, add a Bay leaf and a little minced garlic. We substitute a smoked Turkey leg for the ham hock as we don’t eat pork. Yummy.

Can any of those beans be planted ? I cannot find Lima / Butter bean seeds
The dry ones yes, not the frozen. Test germination by placing between wet paper towels layers.
