I understand things much better when I can manually do the steps, reading directions is harder for me to understand, so I appreciate the time you took to make this video for those of us who learn better by doing!
That’s in the Creator Set. There’s 3 different sets you can buy this Gimbal as. The standard, creator and tripod. Some sets carry over certain items to others.
The creator set ads a few more accesories such as the LED light and other things. It really depends on what king of project you will film with it. In my case I felt I didn't need the extra things.

Does it not seem like a privacy concern that the app requires you to share your whole photo gallery and if you don’t you can’t access the app and all it’s features?
Not really, seeing as a lot of its features mesh directly with your photo gallery and it’s actively applying things to the videos you’re recording and putting in your gallery, I’d say it’s necessary. If you were to force select only certain images/videos to be used on the app, many of its features would break completely. It’s totally always a good thing to be skeptical but I’d say they’re well within reason here. (Plus (and this is more of a personal view), if all of our photos are already on an online cloud that APPLE runs, I’d say we’re all already doomed lol.)
Completing the Bluetooth pairing is the most frustrating step in using the Flow. It’s so unpredictable and unreliable, and pairing directly through Bluetooth doesn’t work. I wish DJI would find a better process to make this easier.

I didn't see any led light?? In other video a small Led light comes with it.....

Is the tripod at the bottom removable? I’d like to use the tracking feature at different heights. Can I put this gimble on other tripods?
You can’t remove the tripod but you can mount the gimbal on a tripod.
