Be careful about lowering cold jars into boiling water. They can crack. It's better to put the jars into warm water and let it all heat up together. Alternatively, you can get the jars hot first, put the hot tomato sauce in, and then lower into boiling water.
FYI: if vac sealing jars of flour/sugar/oats {dust} or anything that is fine or has dust, you can put a piece of parchment paper on top of the product before sealing with lid and you will not clog your vac sealer.

Vacuum would only be for dry foods in a jar. Water bath would be for high sugar or high acid foods like some fruit or tomatoes. Pressure canning would be for low acid foods like bean, potatoes, etc.

@@chriscole9466 We found the regular mouth sealer on Amazon but the wide mouth has been sold out everywhere since that time. Canning jars are gone too.

Thanks Scott. I don’t have any info on the wheat, sorry. I am gluten intolerant and can only eat special flour. We do vacuum seal that flour in cans though.
The lemon juice adds just a bit more acidity so it avoids any botulism forming. I ust add it as extra protection to the acidic foods and also to fruits that I can. There is no need to add it to alkaline foods that need to be pressure canned.
The acidity in tomatoes is not actually high enough to prevent botulism. You can use 1/4 tsp of citric acid per pint or 1/2 tsp per quart if you don’t want to use the lemon juice. Also note that you need to use bottled lemon juice rather than fresh because you want at least a 5% acidic solution - acidity varies in fresh tomatoes. Even if you use a pressure canner for tomatoes and similar “low acid” foods, you need to add the acid. Reference: nchfp.uga.edu. Happy canning!
I think there is a future demand for gatherings around cooking facilities where people bring their own food and use the energy provided at the public cooking place. Who would invest in a start up steaming facility? Conveyor belt, Steam source, fancy room to enjoyit in. Caveman theme: Who would love to pretend it is caveman days and gather to partake in a feast? Brick pizza oven and paddles: Would it be feasible to open a brick oven to the public to use to cook their own pizzas they bring in? -or maybe provide the crust, sauce and cheese and invite any toppings the customer brings along with them to the party? AND to avoid lawsuits, set all of this up on a remote island where there are no laws about food prep? Anyway, is it possible that natural gas might become so expensive that we will not use it to cook food we will then not eat? Will electricity become so expensive that we will not cook food we are not sure we will eat? Will there be a plan for single dwellers to prepare food for a group somehow? Could there be a leftover pickup service that brings hot food from people who cannot finish their night's cooking to those who need it? I am ready to move thi post to trash as soon as someone comments that this problem has already been solved and I missed the boat! 0 Comments
Never put a ring on. You need to know the seal breaks. If you are checking your pantry and going through or rotating your pantry then you will know the seal broke.

You can water bath beans too I watch my grandparents do it for years We never used a pressure counter

I have had experience yrs ago.canning with the water bath method. Never did canning with the pressure canner.
It is good to have both at your disposal.

A saucepan wouldn’t work. You need the jars submerged by water and standing upright. The canning pot is not that expensive. Only $20
What kind of pressure canner do you use on your electric stove?
They make different models that are labeled as to what type they are. You will have to find the one that works with your stove.
