    Stumbling into Fallow: Not Your Average UA-cam Rabbit Hole
    So, there I was, just killing time on UA-cam, right? Suddenly, this video pops up - these chefs, Will and Jack from Fallow, are messing around with a McMuffin but making it all fancy. It Caught my eye, not gonna lie. So I Went down the rabbit hole on their channel and found this killer recipe for Brussel sprouts. Yeah, you heard that right. Made me actually want to eat Brussel sprouts. So, I whipped up my own take on it, and threw it up on UA-cam - hit up the description if you wanna check it out.
    After binge-watching their stuff, I was hooked. Knew I had to check out their joint. Next trip to Europe, I squeezed in a 24-hour layover in London just for that. Heads up, this place is hot - had to book months ahead to snag a table. But man, was it worth it. Got a video coming soon on the whole whirlwind, so keep an eye out.
    Walking into Fallow, you can feel this place is different. They're all about keeping it green but without making a big deal out of it. The open kitchen setup is amazing you Feel like you're right there in the mix, watching the chefs do their magic.
    So, after finally making it to Fallow, the anticipation was real. This wasn't going to be your typical dine-in. From what I'd seen online, these guys take the whole farm-to-table game to another level. And let me tell you, they didn't disappoint.
    *The Main Event: Cod's Head and Mussels*
    First up, the cod's head with that Sriracha butter. Now, hear me out - it sounds wild, but this dish? A complete game-changer. Imagine this: the cod's head, flame-seared till it's got that perfect char, then drenched in this spicy, buttery sauce that's just bursting with flavor. It's not every day you see something like this on a menu, especially back home in Newfoundland where cod is king, but usually more traditional. This was like a nod to the old days but with a kick-ass twist.
    Then, those mussels. Not your average seafood dish. These bad boys were served up on a thick slice of their in-house sourdough, catching all that rich, bacon butter sauce. It’s like every bite was a mix of crunchy, savory, and just straight-up deliciousness. Watching them prep this - setting the mussels on fire for that smoky taste, then watching the flames lick the sides of the beef ribs - was like a show. Made the food taste even better, if that's possible.
    *The Sidekick: Roasted Potatoes*
    Can't forget about the roasted potatoes. These weren’t your soggy, afterthought of a side dish. We're talking crispy on the outside, soft on the inside, seasoned to perfection. It’s like they knew exactly how to hit that spot where you're satisfied but still scooping around the plate hoping for one more bite.

    This meal at Fallow wasn't just eating; it was an experience. Made me want to grab my chef coat and apron and jump on the line with them.( if they asked I probably would have )
    During my visit to Fallow, what really hit home was how deeply committed they are to sustainability. Their whole deal - from making sure nothing goes to waste and using every part of the fish like the cod's head, to turning leftover veg scraps into killer kimchi - was impressive. It's clear they're not just about whipping up top-notch grub; they're doing it with a keen eye on respecting the planet. The place breathes a philosophy of nose-to-tail eating and sustainability, infusing every bite with a sense of care and thoughtfulness. It's the kind of approach that shifts your perspective on dining, making you appreciate the food on your plate in an entirely new light.
