bill represents the author , and its weird powers represents the "decision of writer that can drastically influence the story" , its a clever way to put youself in the story like that :)
The funny thing is-bill was never ment to ACTUALLY be an important part of the show. He was basically supposed to be an ear-worm and nuisance to dipper, but fans LOVED the theories and the zodiac that it manifested Bills importance.

my main question is if stan wanted the journals why did he hide them in the first place we know he knew about the portal hes been working on it since ford went missing and if he realized after he hid them why didn't he just go get them after all HE hid them
Ford hid the journals.
Ford only asks stan to hide journal 1. There is a high likelihood that Ford hid the others.
Because he didn't hide them, Stanford hid the first two journals and gave the third one (not literally the third i genuinely can't remember which journal dipper gets and which one Gideon gets and which ones Stan has... sorry haven't watched in a while and not searching through a 3 and half hour video to find it lol) but yeah the Author hid 2 of them not Stanley
I didn’t know Mabel was older, since she said in the episode about their height difference, “You know Dipper, I’ve always wanted a *little* brother. Who knew I HAD one already?” I always thought Dipper was the oldest from that statement.
One episode does not take over a year to make, the show has twenty episodes which aired over a year and two months.
they work on them in a staggered fashion so that the episodes come out routinely but it does take them a long time to finish one episode since they don’t work on one, finish it, then move on to the next
