    TURKISH 'ZEYTINYAGLI PIRASA' RECIPE - Leeks And Carrots In Olive Oil - A Great Winter Side Dish

    In this episode, I'd like to share with you an amazingly delicious winter side dish, 'Zeytinyağlı Pırasa' (Zay-tin-yah-luh Pur-ah-sah). We simply love it, so I cook Pırasa about once a week. It is usually served with the main dish but you can also serve with a soup and some salad, for a light lunch or dinner. So easy and quick to prepare, hope you give it a try!

    INGREDIENTS (2-3 servings)
    4 small leeks
    3 small carrots
    2 tbsp uncooked rice
    3/4 cup cooked chickpeas (optional)
    1 tsp granulated sugar
    2 - 1/2 cups hot water
    Olive oil
    1/4 cup lemon juice
    1/2 tsp salt
    A pinch of white pepper
    DIRECTIONS
    Peel the tougher outer skin of the leeks, discard the root ends and cut into uniform pieces.
    If your leek is fresh, certainly you can use the green part.
    Transfer leeks into a bowl, fill the bowl with water, set aside.
    Peel carrots, cut the stalks.
    Rinse and drain.
    Cut into uniform pieces.
    Heat 1/4 cup olive oil in a large pan, over medium heat.
    Add the carrots and sautee for about 3-4 minutes, stirring occasionally.
    Add the rinsed&drained rice and leeks, mix well.
    Totally optional but you can also add 1 heaping tsp tomato paste, if desired.
    Sprinkle 1 tsp sugar, mix.
    Add 2 - 1/2 cups hot water.
    Add chickpeas then bring to a boil.
    Reduce heat to the lowest possible setting, cover and simmer for about 20 minutes.
    In the meantime, squeeze 1/4 cup lemon juice.
    When the time is up, remove the lid of the pan.
    Sprinkle 1/2 tsp or to taste salt and a pinch of white pepper.
    Add the lemon juice, mix.
    Cook for about 5 minutes or until most of the water has evaporated, over medium heat, stirring occasionally.
    At this point, make sure to keep an eye on it.
    And then turn off the heat.
    Drizzle with some olive oil, mix gently.
    Check for the seasoning, cover with a lid, leaving the lid slightly ajar.
    Let cool for about 10 minutes.
    Transfer into a service plate and garnish as desired.
    You can serve 'Zeytinyağlı Pırasa' warm, at room temp or chilled.
    Best eaten, the day after it's made and it keeps for up to a few days in the fridge.
