Have you ever made your own pasta? Unlike what most people believe, it's quite easy and fun to do. This version is based on red lentils, which are super cheap and easy to find anywhere.
Lentil pasta is amazing, but it can be a bit pricey and depending on where you live, chickpea or lentil pasta can be difficult to find. So we figured, why not share a simple recipe that you can follow to make your lentil pasta that is gluten-free as well and super high in protein.

Ingredients
2 tbsp ground flax seeds
6 tbsp water
1 cups of red lentils
1/2 cups of buckwheat flour
1/2 cups of rice flour
1/2 tsp sea salt
1 tbsp olive oil
12 tbsp water
Cooking steps
1. Prepare the flax seed egg by mixing the flax seeds with 6 tbsp water and let it sit for 15 minutes.
2. Make the red lentil flour by blending them in your blender. Pour through a sieve to get rid of the big chunks.
3. Mix the red lentil flour with the dry ingredients. Then, add the oil, water and flax seed egg.
4. Knead with your hands into a firm ball of dough. Let it rest for 10 minutes.
5. Spread flour on your kitchen surface, use a rolling pin to flatten the dough (use half of the dough ball first.)
6. Cut the edges off to get a rectangle.
7. Cut into long noodle shape.
8. Bring water to boil, add salt. Boil noodles for 5-6 minutes.
9. Serve with your favorite type of sauce.

You probably know this, but just in case, a "tablespoon" or "tsb" is an actual consistent volume measurement like a liter not just a literal table spoon (although I'm sure that was the basis from centuries ago).
I made pasta just with red lentil floor +oil+water. You don't need to mix other floors 😊

Have u ever tried a noodle maker hand-operated machine to turn this dough into a thinner sheet? I bet it should work very easily! Some years ago I used to make noodles, lasagne sheets or spinach ravioli only with buckwheat flour or yellow lentil flour plus eggs...they were so perfect with a fish (tuna or salmon) sauce. Well I'm thinking seriously to restart fresh pasta making and experiment with your proposed ratios without eggs this time.
I also often use my kitchen machine to grind oat/buckwheat flakes for gluten free flours, or to make a mince from water-soaked chickpeas or various beans.

Thank you, Samuel! I was considering buying lentil flour but it's very pricey, plus I prefer to make my own recipe ingredients whenever possible to avoid commercial processes and chemicals. With your recipe, I don't even need a pasta maker. I have some organic red lentils in the pantry and I can hardly wait to make this pasta!💝

Thank you for the receipt. I've just made it, cut it and stored it in the fridge for tomorrow's lunch.
It was easy, actually the worst part was to sift the lentil after blending.
I did use a flax egg, even I wanted to use egg but noone responded how many eggs, and the dough has bad smell, I m sure it's of the flex egg..I hope it will evaporate otherwise it could end up as a bad smelling lunch.
And, I've used only lentil flour. 1 cup. I've made just a half of the receipt. When I was rolling it I've used whole grain wheat flour.
I haven't used other half of the dought, I've just wrapped it and placed in the fridge.

@@Yes2LifeShow well so far most everything is so wonderful... i guess the only thing i could think of right off hand is wild mushrooms since I have so many dried wild mushrooms... powder form, and sliced dehydrated it would be interesting to see ideas. OH maybe some tempeh recipes/ideas and carob recipes.

I keep making this pasta over and over again, with some slightly twists in the recipe bu t it is awsome every time.

Can these noodles be dried the same as traditional noodles , for long term storage?
Thanks for your comment, Caroline. That should be no problem, but they are more likely to break than regular pasta.

Hi Sarah! Yes, you could probably use garbanzo flour as well! Just make sure to get the right consistency of the dough, meaning it shouldn’t be too runny or too firm. Let us know how it worked :)

I've a question! Is that flax seed raw or roasted??
I'm about to try this recipe But... I'm confused as to the time difference between where I am and where he is... his 10 minutes was actually 1hr and 40min... how do i convert this into my time...
Do you then cook this fresh? Legume pastas are everywhere but it’s hard to find recipes/videos of makin it fresh!
How does it compare cooked fresh vs dry from the box?
Very sorry for the late reply. Yes, you cook it fresh. It's a bit more thick/doughey than dry legume pasta and cooks faster.

do you think 50g of tvp flour (textured vegetable protein/ soy protein in powdered form) and 50g vital wheat gluten will work? i am asking this because just 100g of this spaghetti/ noodles will have 63g of protein.
Thanks for watching. I haven't tried it, but I think if you only use those ingredients, you will get more of a steak like texture. Let me know what happened.
You could add in a bit of vital wheat gluten into this lentil pasta recipe, in order to increase the protein content and to make the dough stronger.
@@Yes2LifeShow and the reason for getting steak like texture is because of vital gluten right, what if i reduce gluten from 50g to 25g and increasing tvp to 75g to make 100g(75g tvp, 25g gluten)
Why not use lentil flour on the cutting board?
So cool, I wonder, whether I can make this in my Pastamaker, in that case the flaxseed would have to be flour as well...

It didn't work well for me. Let me know if you had luck with it!
Make flax-gel instead, crush the flax seeds (don't turn them to flour it will not work, just crush the shells), bring your water to boil. Add the crushed flaxseeds to already boiling water. Stir for 3 minutes. Let it cool a bit, you'll see the water turns to gel. When it is cool enough to stick your finger into stain out the seeds. I use pantyhose. Use the gel in the pasta and eat the leftover seeds in your muesli tomorrow.

Can chia seeds be used to replace flax seeds? Kind of hard to find it where i live.

I tried them out today but unfortunately they did not turn out great. The taste was alright but the texture was not good. It was quite hard/stiff. And I could not roll it out very thin as the dough was breaking then. I sticked to the measurements so not sure what went wrong. Too bad.
Can you use a coffee grinder to make the lentil flour .
Also can you use any colour lentils for this pasta

I don't have the other flours, I tried only a few days ago with lentil flour and I got too sticky (the dough sticks to the work surface).
That's true, unfortunately just lentil flour on its own doesn't work as easily
So maybe some other kind of flour (soy / hummus / oatmeal)

Should not the lentils be well rinsed (then dried?) first??
wdym? the point of rinsing is to get rid of the lentil dust.
but this recipe you are essentially making pure lentil dust
rinsing, drying, then blending...
that would be like evaporating salt water so you could have the salt grains to salt your pasta water, therefore creating more salt water from the salt water you just unmade 🫠

Thank you! :) you probably can use rice flour or chickpea flour instead of the buckwheat flour. Or if you have no problem with gluten, you could even use wheat or spelt. Hope that helps :)
@Safiya Hesham Oat flour would be my favorite option too, but unfortunately it is not sticky enough. You can make your own buckwheat flour in a high-speed blender though, by blending buckwheat.
You could also try the recipe by replacing the buckwheat with equal parts rice flour.
Sago flour is sticky, haven't tried it, but it is worth a shot. Just like the lentils you can just use regular sago and grind it in a blender.

I grind my own with a coffee grinder to save money ;) My grandkids LOVE homemade crisps with hummus (& I add some black beans, roasted garlic & ginger: From the 18 month old to the 4yr old, they NEVER get sick!). How to make it with only lentil flour?
I know that the one at the store has 100% lentils, but i haven't found a way yet to only use lentil flour in this recipe because it will not be sticky enough.
I found a way. Make the dough with lentil floor. Then put rice floor on the wood before rolling. It works perfectly
Can you replace the rice flour? I am allergic to most grains.
You could try it with more buckwheat but rice flour is a lot more sticky than buckwheat flour, so it might fall apart more easily.

What is rice flour?
You can find it at most Asian or organic supermarkets. Or if you have a Highspeed blender, just blend regular rice until you get a flour and sieve it

@@farrellvanessa I haven't tried it yet with brown rice flour. I think the consistency might be different because the white one is more sticky and starchy.
I only used oat flour instead of buckwheat for pancakes and it made them hard to stick together. Worth a try though :) Let me know

Thanks for watching. I think at least for a week or 2, but it might behave differently once it sat in the fridge, since the dough is very different from normal dough - much more tense

Hello I just made the dough and it was sticking badly to the rolling surface and I couldnt remove the cut strips as it was sticking to the rolling surface ? Is there any troubleshooting method for this ?
Hi, thanks for sharing! Try to flour the surface with buckwheat flour or corn starch before rolling out the dough. This should prevent it from sticking out the surface. Let us know if it helped :)

Have you ever tried to make Lentil Milk or Lentil tofu??
I think lentil tofu would work well but lentil milk doesn't sound like the tastiest option 😅
Looks too thick. I'd add a few more Tablespoons of water, so that dough can be rolled out thinner.

Ya if you dont have a power blender, everyone can go spend 400$+ to buy one to make pasta.
That one was just $100. You could also use an electric spice grinder (less than $30) and work in smaller batches.
Or you could buy a package of lentil flour for $2 or $3

eggs aren't vegan.
It's a flaxseed "egg", so it is meant to replace eggs. It's just flaxseeds mixed with water, which gives it a similar consistency in vegan baking as eggs
