  • “The Floating Island “
    - This is a well-known Filipino dessert also commonly known as Brazo de Mercedez. It is made of baked meringue, yema custard and Ube Filling. I put a unique twist on this classic dessert. This dessert is a must-try:)
    Meringue:
    9 eggwhites
    100 g sugar
    Bake at 350F for 20 minutes.
    Yema Custard:
    9 eggyolks
    150 g condensed milk
    160 g evaporated milk or fresh milk
    16 g cornstarch
    2 g salt
    Mix everything in a saucepan. Cook on low heat until it thickens.
    80 g Ube Halaya ( for the use custard ) - add this separately into the cooked custard
    Marshmallow Frosting:
    3 eggwhites
    100 g sugar
    50 g water
    10 g gelatin
    Combine sugar and water and heat to simmer. Whip the egg whites until frothy.
    Add the hot sugar syrup gradually. Whip until it reaches stiff peaks.
    Add the melted gelatin. Put in a piping bag.
