First off Granny Pat, I have that same corning casserole dish set. I have made 4 of your recipes and have never been disappointed. At family gatherings now I am always requested to bring those veggie bars. A big hit. The French dressing is delicious. The cream corn excellent. This casserole looks yummy. My daughter is expecting a baby. I am going to be fixing meals for her family when the baby arrives. I will be adding this recipe to the others I am gathering. Casseroles are great for preparing ahead when taking meals to those needing a helping hand. The camera set up was fine. Heard you perfectly.
Looks delicious!! This is very similar to my own broccoli casserole. I use Cheese Whiz, Italian breadcrumbs, and slice a stick of butter into the pan. Bake until cheese bubbles. So yummy!!

I make my chicken salad the exact same way you do except i don't use celery because i don't like it and I add a bit of sour cream along with the mayonnaise. I think the sour cream adds just a little extra flavor. I've been told by lots of people that it's the best they've ever had. I usually don't comment but I watch all your videos. I just love me some Granny Pat. ❤

I was excited to see you were going to make broccoli casserole! After my drs appt Fri Sept 29th my sis and I had supper out since I don’t get out much. We decided on Cheddars, do you have one where you live? Went there especially for their broccoli casserole. It is awesome!! All the broccoli casseroles I’ve ever had had rice in it and while I like rice a lot I don’t care for it in broccoli casserole. The casserole at Cheddars had no rice in it. Even my sister got it with her steak and she loved it. I just can’t figure out how they make it. Yours looks so good and very easy to,make. Definitely want to try it! Your chicken salad looked delicious as well. My Mama made it the way you do. I never tire of chicken salad. You said you didn’t care for casseroles. I am just the opposite. I love them. Squash casserole is a favorite of mine. Of course, I haven’t found a way I don’t like squash! 😂 The doctors have me on every kind of diet imaginable and it makes it really difficult. First, I’m diabetic, so there goes sugar and limited carbs. I have congestive heart failure which has pretty much taken sodium out of my diet. My triglycerides are high so I’m on a low fat, potassium runs low some drink a Body Armor daily to help with this, and I have to work at staying hydrated. It is very hard to find something that falls in these guidelines. I’m sure I’m not the only one who is on such a limited diet. I am 72. Any suggestions? You are a wonderful lady and a great storyteller. Glad to have you in my life. I’m enjoying your friend Marlene as well. I’m the last person who should give advise for dieting. I am pre-diabetic. I just have to watch the sugar intake. My mother never watched anything in her cooking. The family was lucky, never having to limit carbs/protein, etc. Cheddars - I loved their onion rings, they quit making them. I don’t eat out too often, too much food in my own fridge. My food line is limited because I am a picky eater. Living alone isn’t easy, friends and family are very few. That is why my gr’daughter set me up with my own youtube channel. It keeps me connected to people. She said I could tell stories. I enjoy the contacts I have made.

If I were you, I would just toss the leftover broccoli you put the shower cap on, into the casserole and give it a light toss....should be perfect. You made chicken salad exactly like my mother use to. It also was her favorite dish to make for dinner and then, for next day lunch. Although, she always added salt and pepper to it. That broccoli casserole looks yuuum! Broccoli and cheese always go good together. Now for the chicken salad…that looks very much like the Sonoma Chicken Salad from Whole Foods. We make that from time to time but with a whole lot less mayonnaise. I don’t like mayonnaise so I only use enough to make things stick together. I sat here and said “I bet she’s going to say she should have added more broccoli”. LOL
Well let’s be right! What’s cooked from the heart is all that matters! I wouldn’t change anything. Let me give you my heart, all of your fans and family see that and love you, as you are! You are a powerful and loving inspiration to thousands, for me you are a vision of home, my Mother, Grandmother and every day as a small boy homeschooling in the kitchen. You’re so right Granny Pat, there is no measuring in old home cooking, this is what sets the stage for what I say “Mommas” Cooking. I, we, all of us just love you so very much♥️ I’m not to good with words, but we all hug you and are so grateful and respectful to you!
NOTE: My casserole was good, but it needs correcting. I could have added another cup of broccoli florets. Also, Cracker crumbs were too fine and I should have used about 20 crackers. Blend the cheese into the broccoli. Last but not least - do not add salt. I discovered Town House crackers are tastier than Ritz. Hope this helps. (I too, have to learn).

It isn’t easy to correct a mistake on camera. I haven’t learned how to cut and paste, so to speak. Learning this computer stuff is a pain! We’re planning our trip. There will be 4 of us girls. Hi pat. I'll be making this dish. But cutting it up isn't necessary it's going to melt anyway. Also cheese whiz in a jar is made of Velveeta and that's what most use for casseroles. Thank you for taking the time to share with us. This is easy I could add other things too rice or other vegs. I shop from Kroger and also Walmart the better price store for me

You need to practice the recipe. Add more broccoli, fewer cracker crumbs, and no salt.

Ham salad - grind up ham. I add boiled egg/pickles and whatever else you like. I always use mayo.
That's how my Granny taught me. She used a metal hand grinder that clamped to the table for the ham & chicken salad.

You made chicken salad exactly like my mother use to. It also was her favorite dish to make for dinner and then, for next day lunch. Although, she always added salt and pepper to it. God love her....she over salted and peppered everything cooked.😂

That broccoli casserole looks yuuum! Broccoli and cheese always go good together. Now for the chicken salad…that looks very much like the Sonoma Chicken Salad from Whole Foods. We make that from time to time but with a whole lot less mayonnaise. I don’t like mayonnaise so I only use enough to make things stick together. I sat here and said “I bet she’s going to say she should have added more broccoli”. LOL
You are right - more broccoli and fewer cracker crumbs. No salt. Let the casserole brown lightly - 30 minutes at 350.

NOTE: My casserole was good, but it needs correcting. I could have added another cup of broccoli florets. Also, Cracker crumbs were too fine and I should have used about 20 crackers. Blend the cheese into the broccoli. Last but not least - do not add salt.
I discovered Town House crackers are tastier than Ritz. Hope this helps. (I too, have to learn).

Cheap microwave, works for heating food. The casserole needs doctoring! I messed up on it but easy to fix!

It isn’t easy to correct a mistake on camera. I haven’t learned how to cut and paste, so to speak. Learning this computer stuff is a pain! We’re planning our trip. There will be 4 of us girls. We have fun together. Jan is working on our road map. We may dodge Williamsport, too far off the path! Thanks for your help.

Hi pat. I'll be making this dish. But cutting it up isn't necessary it's going to melt anyway. Also cheese whiz in a jar is made of Velveeta and that's what most use for casseroles. Thank you for taking the time to share with us. This is easy I could add other things too rice or other vegs. I shop from Kroger and also Walmart the better price store for me
