How Hotels & Restaurants Can Reduce Food Waste-Easy Solutions for Plant-Based Hospitality Businesses

Two separate studies showcasing specific hotel and restaurant businesses, detailed the steps they took to implement successful food waste reduction programs. Most of the steps taken were simple to implement, generally inexpensive and easily duplicatable.
According to the Restaurant Food Waste Action Guide created by the non-profit organization ReFED, the U.S. restaurant sector generates 11.4 million tons of food waste annually (7.3 million tons from full-service and 4.1 million tons from limited-service restaurants). The full cost of this waste is more than $25 billion. However, restaurants can mitigate these losses and realize an additional $620 million in potential profit per year by simply adopting preventative solutions such as Waste Tracking & Analytics. In fact, the study by Champions 12.3: The Business Case for Reducing Food Loss and Waste (Restaurants), which surveyed restaurants in 12 countries, found that restaurants were able to lower their food costs between 100%-600% through food waste reduction.
In terms of the hotel industry, according to an article by MDPI; (Food Waste Drivers in Corporate Luxury Hotels: Competing Perceptions and Priorities across the Service Cycle), it has been estimated that hotels in the UK alone, produced 79,000 tonnes of food waste in 2012 at a cost of £318 million to the industry. Similar to their findings for restaurants, the Champions 12.3: The Business Case for Reducing Food Loss and Waste (Hotels), which covered hotel restaurant businesses in 15 countries, found that hotels which implemented a food waste reduction program were able to save $7 for every $1 invested in reducing food waste.
