The main difference between barbecue brisket and chuck is that chuck has less fat content than brisket. In reality, if cooked as in the video above, many people eating the barbecue beef won't know the difference.

I've smoked chuck roasts, they are phenomenal. They call them a poor man's brisket. I would suggest salting it first, not last. And let it do its magic for a few hours in the fridge then add your other seasonings. I make beef sammies with pepper jack cheese.

If you are going to triple wrap it in aluminum, what is the point of smoking it? Just throw it in an oven. No smoke is penetrating into that.
