    The dough was too grainy my friend, keep mixing until it sounds like branches being broken and there is no tearing on the centre rod, stop the machine and do the window pane test, I use ice water with my mix and it generally takes 18 minutes mixing for two kilos of flour, I stop the machine after 10 mins and rest for 4 then do the last 8 minutes. Hope this helps? Well done everyone who makes their own dough.

    Try a 13 minutes mix time, especially at that slower speed.

    This dough is not ready...the gluten is not formed....
    I don't understand why use the hands when you have a spiral pasta machine..
    You can use the spiral pasta machine for much minute and do a a good dough...
