Christmas Shortbread Cocoa Cookies Recipe | Polish Cooking and Baking

280 g of flour (Polish krupczatka flour/ coarse-ground flour is the best for the recipe, it's type 500; you can also use All Purpose Flour)
20 g of sifted cocoa,
200 g of cold butter (diced),
3 raw egg yolk,
100 g of sifted powdered sugar,
1-2 tbsp of gingerbread spice, optional
To the flour, cocoa, gingerbread spice and sugar, add the butter and rub in with your fingertips, until the mixture resambles breadcrumbs. Add the yolks and knead briefly. Form a ball and flatten it out. Cover with plastic wrap and chill in the fridge for few hours (or overnight). You can also place the crust into the freezer for 15 minutes, to make the process much quicker.
Roll between 2 sheets of baking paper, until 5 mm thick. Cut out cookies. Bake for about 8-10 minutes (200 C). Allow to cool completely (you won't be able to transfer them when hot; they are too crumbly; they need few minutes to harden).
Decorate with some icing or chocolate ganache. They are also tasty without any glaze. Enjoy :)
