I was waiting for a dope tortilla recipe :(
Trick to a good homemade tortilla is to kneed the masa and water with a couple splashes of olive oil for at least six minutes, and let it rest with a wet towel covering it for 5-10 minutes.
Another tip: when you first put them on the pan, cook one side for 10 seconds, then flip and cook for a minute or so, then flip once last time. It should puff up nice.

I'm Mexican, and I can actually say that this looks really good, almost like actual Mexican tacos. We don't add avocado or cotija cheese on them either, but we use a tomatillo sauce though.
We do often add avocado-based salsa too, though. Also, if you just melt queso oaxaca and use a flour tortilla, you can make gringas.
Blasphemy! No avocado touches the al pastor. What's next... a quesadilla sin queso?
La neta it does look good im a taquero and it's not that bad the rajas with piña is good if he had the right equipment I bet he could do a good ass taco just need some salsa

We made these last night and they were amazing! We travel to Mexico almost every year (and I went to university in Mexico 🇲🇽 City)and after taking one bite of these tacos we were transported to Mexico in our minds. Absolutely delicious! We used the spicy mayo from the Elote video and put them on the tacos along with the other featured fixings. I also made pickled red onions and pickled radishes. We did have a little trouble with the grilling as far as getting it cooked all the way through with the thicker layers at the bottom, however, we just finished it in the oven. We made homemade corn tortillas and they are all gone! We are making a double batch of corn tortillas today so that we can have leftovers and we can’t wait! Once again, well done Joshua. You are bringing cooking excitement to our weekends and we are always learning something from your videos. 👩🍳👍🎉
After living in Mexico for a few years, I have to say this is the most authentic Al Pastor I have seen here in the States. I saved this video so I can make it! THANK YOU!!
As a Mexican this is like a dream come true, like having two of my favorite things together?!?! YES SIR! You’re truly a miracle

Mexican here guys... I approve this recipe.
One more thing you could do, to make it more like the real deal, is slice the meat about half of what Joshua said and put onion slices between the steaks when assembling the "trompo". That way you get chunks of onion while slicing the cocked meat.
Josh *shows off his cake in every episode* Samsung: it’s free real estate
Hey dude, just a quick advice: you can cut one third of a pineapple and stack it on top of your meat before grilling and you'll have an awesome flavor.
Anyway, as a Mexican, your recipe is awesome, just like every video you make. 😉
Almost no change if you put or not the pineapple, really. It's better if you add it later, yeah
@@dizzyboy92 Almost, you say. So there's some change. How are you going to do the fancy slicing like in CDMX? 😅

Thank you for honoring my people and doing it right. Good job!
normally we marinade the meat with the pineapples, we don’t serve the taco with pineapple. and we don’t put cheese or avocado on them, just cilantro and onion. but as a mexican i approve of this recipe, just glad you didn’t use a bottled marinade 😹 good job tho
I think he did a good job, they usually don't put the pineapple on the tacos but I always request pineapple on my tacos when I go visit my family in Tijuana. Maybe not the cotija cheese but they do put guacamole and salsa besides the cilantro and onion. A mulita sounds pretty bomb right now lol
Yeah. It’s probably the first time I see a taco al pastor with cheese and avocado. Still looks good.
What the, what do you mean no pineapple in the taco? That's the best part, you get salty meat, sweet pineapple and burning hot salsa
Yeah his way is faaaar from authentic traditional. But im sure the tacos are still ok maybe
Abel de la Torre i never said you don’t put pineapple in the taco...? i literally just said that we MARINATE the meat with the pineapple, not just serve it with pineapple once it’s done. marinating it with the pineapple + sauce gives it the better flavor rather than just adding pineapple at the end.
As a Mexican, i am impressed with this recipe... mexico should give joshua a mexican citizenship.

Wow, i'm mexican and this is actually the best "how to make tacos" video not made by a mexican ive ever seen (maybe better than some made by mexicans) i also like how u replaced the trompo with a grill, very useful.
Just a tip, when you heat up the tortillas, lightly fry them. The texture changes it to something similar you get from street food vendors. Just put your burner on like medium high heat and let them go for a bit on each side. Dont walk away, they burn fast. Then of course out them on a plate lined with paper towels to drain off the extra oil.

@@yellowalone5658 that's so true! And there's a reason for that. It's a bitch to make tortillas for a shit load of ppl lol
@@yellowalone5658 but we have tortillerías, that's a huge difference.
You could buy a tortilla press. It’s so easy and fast. Flavor and softness of freshly made corn tortillas is unsurmountable. (Tortillas you usually buy at Walmart stores in USA have sugar as an ingredient, which real “tortillas de maíz” never have, it just doesn’t.
Every body talking about store bought or scratch made tortillas, are we going to ignore the fact that the pineapple isn't skewered with the meat?

I'm a taco truck junkie and to me a taco is meat, chopped onions, cilantro and lime. Optionally a bit of hot salsa and cotija cheese.
That being said I do think that pineapple salsa looked pretty good.

Fun recipe to add to the arsenal. I don't have a grill, so to make it apartment friendly I added 1/2 TSP of liquid smoke to the marinade, cut my pork slices a bit thinner (chashu-ish), layered them in a loaf pan and roasted at 275*F for 4 hours after doing the overnight marinade. Drained the fat from the pan, let meat cool and then sliced as directed. My pork browned rather nicely in the oven, but I crisped the meat further with the rendered fat in a cast iron pan right before serving. Delicious, fairly hands-off after the prep is done and the place smells like a taco truck. Win/win!

All good until cotija and avocado were added!!! We don’t eat them whit that 😰😰😰😰😰
Not every Mexican eats the same thing some might. And that’s the great thing about tacos. Their versatility. Although I wouldn’t eat it with avocado, to each their own.
@@mar7268 Of course some might eat them with cotija cheese and avocado. We call them savages. And then the dish goes from "tacos" to "chingaderas".

Well what's wrong with "but better" series? He IS doing his own take on mainstream fast food items, so that is still his own thing. And it enabled him to gain a mainstream audience I feel like, the way Babish does with food on movies and TV shows. It's genuis and I actually like it. Not bashing your opinions by the way.

It's a really good recipe. Correct rendition indeed. Extremely close too.
Just some details, as they said, no cotija, no avocado...
Allow me to suggest you try them with Chipotle sauce (get some canned and run then through the blender for some seconds). Alchemy.
You have definitely been to Mexico.
This is an authentic homemade taco al pastor. Congrats!

Don't know what to say i am damn early.
The timing of the “b-roll” was off :/
My review after making: 1.) The al pastor meat tastes really good, I reduced the cinnamon to 1 tsp(personal preference 2.) the pineapple relish was really bland in flavor and visually wasn't an appetizing condiment. I definitely would try to make a relish again but would not recommend joshuas recipe
Only thing missing was orange juice for the marinade. Gives it a tangy, sweetish kind of taste. It is traditional in taquerías right here. Kuddos, Josh!
