I'm Mexican, and I can actually say that this looks really good, almost like actual Mexican tacos. We don't add avocado or cotija cheese on them either, but we use a tomatillo sauce though.
La neta it does look good im a taquero and it's not that bad the rajas with piña is good if he had the right equipment I bet he could do a good ass taco just need some salsa
Trick to a good homemade tortilla is to kneed the masa and water with a couple splashes of olive oil for at least six minutes, and let it rest with a wet towel covering it for 5-10 minutes. Another tip: when you first put them on the pan, cook one side for 10 seconds, then flip and cook for a minute or so, then flip once last time. It should puff up nice.
As a Mexican, I’m amaze of how close he got to the original and also humble enough to recognize that it’s not the tradicional recipe. Still close enough
I’m Mexican and my dad cooks tacos al pastor very often, for a more flavorful taco put some onion in between the meat layers (also cover them in the sauce). It’s gonna be much more flavorful and good :) But overall very nice recipe

Tacos al pastor are probably the most respected tacos here inn Mexico, but there are so many variations to it and only until recently many chefs are playing with the typical recipe, now even making black tacos with nero di seppia and so on. (I know you said the recipe wasn't all that traditional, but it's way better than many other recipes I've seen in "traditional" taquerias, they use bottled marinades often)

We made these last night and they were amazing! We travel to Mexico almost every year (and I went to university in Mexico 🇲🇽 City)and after taking one bite of these tacos we were transported to Mexico in our minds. Absolutely delicious! We used the spicy mayo from the Elote video and put them on the tacos along with the other featured fixings. I also made pickled red onions and pickled radishes. We did have a little trouble with the grilling as far as getting it cooked all the way through with the thicker layers at the bottom, however, we just finished it in the oven. We made homemade corn tortillas and they are all gone! We are making a double batch of corn tortillas today so that we can have leftovers and we can’t wait! Once again, well done Joshua. You are bringing cooking excitement to our weekends and we are always learning something from your videos. 👩🍳👍🎉
cause he is. Not him but the screen. Screens look terrible on camera. So it's common practice to just place a green image on the screen and later on replace it with footage you might want. Which kinda defeats the purpose of showing off a screen that's supposedly good outdoors, if you ask me. But it's ok since it's not really a tv screen review either.

I'm guessing you have background in film, so do I. I've never been in a shoot where we used actual footage on a screen. Also it's more practical since it allows you to choose the footage/image to display in post. And you know what's better than fixing it on post? Doing it all together lol

Fun recipe to add to the arsenal. I don't have a grill, so to make it apartment friendly I added 1/2 TSP of liquid smoke to the marinade, cut my pork slices a bit thinner (chashu-ish), layered them in a loaf pan and roasted at 275*F for 4 hours after doing the overnight marinade. Drained the fat from the pan, let meat cool and then sliced as directed. My pork browned rather nicely in the oven, but I crisped the meat further with the rendered fat in a cast iron pan right before serving. Delicious, fairly hands-off after the prep is done and the place smells like a taco truck. Win/win!
Mexican here guys... I approve this recipe. One more thing you could do, to make it more like the real deal, is slice the meat about half of what Joshua said and put onion slices between the steaks when assembling the "trompo". That way you get chunks of onion while slicing the cocked meat.

normally we marinade the meat with the pineapples, we don’t serve the taco with pineapple. and we don’t put cheese or avocado on them, just cilantro and onion. but as a mexican i approve of this recipe, just glad you didn’t use a bottled marinade 😹 good job tho
I think he did a good job, they usually don't put the pineapple on the tacos but I always request pineapple on my tacos when I go visit my family in Tijuana. Maybe not the cotija cheese but they do put guacamole and salsa besides the cilantro and onion. A mulita sounds pretty bomb right now lol

You could buy a tortilla press. It’s so easy and fast. Flavor and softness of freshly made corn tortillas is unsurmountable. (Tortillas you usually buy at Walmart stores in USA have sugar as an ingredient, which real “tortillas de maíz” never have, it just doesn’t.

One place I ate at in Mexico City layered pineapple slices on the spit about every 3 inches with pork in between. When they sliced it the pineapple would shave off with the pork which was amazing

Just a tip, when you heat up the tortillas, lightly fry them. The texture changes it to something similar you get from street food vendors. Just put your burner on like medium high heat and let them go for a bit on each side. Dont walk away, they burn fast. Then of course out them on a plate lined with paper towels to drain off the extra oil.

Wow, i'm mexican and this is actually the best "how to make tacos" video not made by a mexican ive ever seen (maybe better than some made by mexicans) i also like how u replaced the trompo with a grill, very useful.
normally we marinade the meat with the pineapples, we don’t serve the taco with pineapple. and we don’t put cheese or avocado on them, just cilantro and onion. but as a mexican i approve of this recipe, just glad you didn’t use a bottled marinade 😹 good job tho
I think he did a good job, they usually don't put the pineapple on the tacos but I always request pineapple on my tacos when I go visit my family in Tijuana. Maybe not the cotija cheese but they do put guacamole and salsa besides the cilantro and onion. A mulita sounds pretty bomb right now lol

Abel de la Torre i never said you don’t put pineapple in the taco...? i literally just said that we MARINATE the meat with the pineapple, not just serve it with pineapple once it’s done. marinating it with the pineapple + sauce gives it the better flavor rather than just adding pineapple at the end.

You could buy a tortilla press. It’s so easy and fast. Flavor and softness of freshly made corn tortillas is unsurmountable. (Tortillas you usually buy at Walmart stores in USA have sugar as an ingredient, which real “tortillas de maíz” never have, it just doesn’t.
The resolution and color balance is K I L L E R on this video. Also, I'm going to try this recipe in some form soon. Mouth watering.

One place I ate at in Mexico City layered pineapple slices on the spit about every 3 inches with pork in between. When they sliced it the pineapple would shave off with the pork which was amazing
Ah man you probably missed the spot but there is this place in Mexico city that does Al pastor with octopus, same trompo with pineapple but is with an octopus instead, it’s like having a sea food cocktail but in a taco

Just a tip, when you heat up the tortillas, lightly fry them. The texture changes it to something similar you get from street food vendors. Just put your burner on like medium high heat and let them go for a bit on each side. Dont walk away, they burn fast. Then of course out them on a plate lined with paper towels to drain off the extra oil.
