- Maple Walnut Blondies
Ingredients:
1 cup walnuts
2-3/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
2 sticks butter, cut into pieces
1-1/4 c. packed brown sugar
1/2 c. good quality maple syrup
2 eggs, at room temperature
1 tsp. vanilla
1 tsp. maple extract
Frosting:
1-1/2 sticks butter, softened
1/4 tsp. salt
1/3 c. good quality maple syrup
1-1/2 c. powdered sugar
1 tsp. lemon juice
1/4 tsp. maple extract
Preheat the oven the 350. Line a 13x9 pan with foil, making "handles" out of the overhang. Coat the foil in the pan with nonstick spray. Place the walnuts on an ungreased baking sheet and bake for 10-12 minutes. Allow them to cool a little, then give them a rough chop. In a large bowl, whisk the flour, baking soda & salt. In a saucepan, Melt the butter and continue to cook on medium for 10-15 minutes until little brown flecks form. Remove from heat and whisk in the brown sugar and maple syrup. Let it cool 5 minutes, then whisk in the eggs 1 at a time. Add the extracts. Whisk the butter mixture into the flour mixture, then fold in the walnuts. Spread the batter in pan. Bake until a toothpick comes out clean, 20-25 min. Cool completely, then lift them out of the pan with the handles. Invert onto a cutting board and peel away the foil. Frosting: Beat the butter and salt until light and fluffy, about 2 minutes. Beat in the maple syrup. Beat in the powdered sugar in 2-3 batches, then mix in the lemon juice and maple extract. Spread over the blondies, cut, and serve.
