For me, it is harder to mount an attack, when the other guy does not castle. If they castle early in the game where I still have strong pieces, I don't have a problem with sacrificing a bishop or maybe a knight, to break up that castle. After they castle, I concentrate on the attack there, and do not usually move powerful pieces to the other side of the board. If they don't castle, it is harder for me to mount attack, and defense does not win games.
