    My hubby just watched this video and said that's how he does it, too. He's cleaned and deboned probably 1,000 deer over the years. He's 78.

    There is a gland in the "ham" between two of the muscles. Make certain that it is removed. It will ruin your roast or if you want to smoke the "ham" whole. You don't want to feed that to your family.

    You can get a lot more of that back strap meat by cutting down to the silver skin. Left a 1/4 " of meat on it.

    After I have the deer quarter L put them in the freezer for a few hours shifting the meat up make it so easier cutting

      Same here . . . Usually quarter and let in the frig over night... Plus being an archery hunter you want to cool down as soon as possible

    He called the sirloin the eye of round twice and then got it right at the end. He called the eye of round the hidden tenderloin. Good technique, bad description.

    I use a mr fisherman electric knife to butcher mine, its easy, and quick.ive got a real bad backs im in a hurry to get it done.i leave very little meat, plus there's no better watt rid that silver skin.venison is all the meat I eat except fish I catch.

    This is way harder with road kill. Probably not a good one to practice on.

    If you are making an instructional video you should know the terms. The “football” roast is not the eye of round

      He actually gave three pieces of the hip incorrect names. He needs to learn their correct names if he is going to do an instructional video. ☹️
