Skillet Chicken Divan

  • Chicken Divan recipe that comes together quickly, it's good!
    Ingredients:
    12 ounce bag of frozen broccoli florets
    1 Tablespoon light olive oil
    1 Tablespoon butter
    seasoned salt
    1 large chicken breast (sliced or cut into strips)
    2 Tablespoons dry white wine or dry vermouth
    1/2 cup cream
    1/2 cup water
    1/2 teaspoon dry mustard powder
    1 can cream of chicken soup
    1 and 1/2 cups of Minute Rice
    1 cup of cheese (4 ounces)
    Season your cut up chicken with the seasoned salt, allow to rest for a few minutes.
    Blanch the broccoli for 5 minutes in boiling water, then cool in ice water and set this aside.
    I pulled the frozen broccoli out of the freezer the day before and allowed to defrost in the refrigerator.
    Heat your pan, then add your oil and butter.
    Cook your chicken to your liking.
    Remove the chicken to a small plate and set aside.
    Deglaze your pan with the wine.
    Add your cream, water, dry mustard and cream of chicken soup.
    Mix well in the pan, then add your Minute Rice and stir.
    Add your broccoli and chicken to the pan and stir.
    Top off with the shredded cheese.
    Put your skillet lid on and turn off the heat.
    Allow to sit for 5 minutes covered, then serve.
    Makes 2 to 3 servings.
    You could use leftover rice if you wish.... 1 and 1/2 cups

    Chicken, rice, and broccoli is one of my absolute favorite dishes/casseroles/whatever one wants to call it. I love mixing up the variety of rice, cream soups, and rice. I think I could eat it at least five days a week (though I've never tried so maybe not. LOL).

    Nice shiny pan. Is that a De buyer steel pan? Also a new stove? I remembered the white one with those (guess typical usa) round heaters. Must say, love the American stoves. All types.

      Thank you for that Tina! If you are ever in an Asian Grocery, look for the fried shallots. The are even better than the Frenches Fried Onions.

    I seem to remember my grandma making that or someone back when I was young. I remember giggling at the name because divan is an old word for sofa in some places! But it looks divine and that's a good thing. I think I'll send a link to my son (he's the supper cook) to see if he'd like it. Gary will eat anything we put before him! :D Thanks Michael. Another wonderful recipe. Oh yeah, don't you love the way chicken browns with a combo of butter and oil? It's so pretty.

      @@MichaelsHomeCooking 😀 He suggested cauliflower rice would be as quick. And yeah. We always have chicken broth to make sauces. This is cool because the recipe is all pantry staples!

    This is a great one pot dish. I think I would choose parmezan over cheddar. And...probably said it before...I love how you really enjoy your home cooked dishes. I sometimes experienced that people say the opposite. 💯 Awesome that you shared recipes for quite a long time 👍👋

      I don't normally have Minute Rice either, but a person could have just cooked rice ready to add at the end :)
