I actually believe this is some how the best candidate we have so far with the current information in deltarune it would also explain why the man hasn't said anything to us yet, because it would be very obvious who it is since all the skeleton characters speak in the fonts they're named after also the motifs in honksong are spear of justice which makes sense since undynes there, dogsong because the annoying dog cause the crash, and if this theory ends up being right, grandpa semi's theme because he's in one of the cars if you interacted with him before in chapter 1 (the one problem with this last point is that your best friend is also in this song but I'm going to ignore that since I can't think of a reason of why it's in there)

I believe there was some speculation that he was the little guy in the Snowdin house over the cliff, or that, like you said, he may have been reworked into Gaster. the Sans and Papyrus connection was always there and every depiction I saw of him was a skeleton. I think I even made my own fan design back then and started working on a (very poorly made) battle but that's lost now unfortunately. I gave him a bone cane and made him bob up and down bending his knees like an old cartoon skeleton lol

I think it might be Asriel. I heard that he had some connection with Dess, so maybe he went out to find her by going wherever she went to disappear from existence. And by doing so he lost his body (aka his sprite) and is losing his memories. Tho maybe he came prepared in some way because others don't get their memories about him erased (or maybe the memories don't get erased at all and people just don't wanna talk about Dess). Then maybe Ralsei stole his sprite to appear in the dark world. Maybe even Ralsei is the second voice from the gonner maker. That would explain how he teleports between dark worlds: he just can. It would also mean that he isn't darkner.
If nothing else thus cemented in my mind that we need one of them to play Sheriff Serif. (On a meta level though, I feel like there’s no good answer for why the “deliberately cut” character wouldn’t be the one he’d name Sans - absent; a perfect name for the concept.)

I am not making sweeping assumptions about additional details that we don't have or cannot directly imagine from UTDR's official material. This is not like this hypothetical interpretation of Mike that you mention. Neither Mike nor FRIEND (if this is the one you refer to) are demonstrated to have anything to do with cats or luck. Moreover, even though the Man and Unknown have to do with RNG, given they are rare encounters, FRIEND is a 100% guarantee every time. So Mike showing up to 'turn Spamton's luck around' has nothing within the current game that can be interpreted as a plausible answer. This is also not helped by the fact that there is currently no evidence that it was Mike/FRIEND who helped Spamton initially become a big shot. From what can be more safely discerned, especially with the phone motif and the Addisons' relay, Spamton's advisor was almost certainly always Gaster himself. Not a guarantee, but with what we know, it's by far our best answer above all else. So no, this version of Grandpa Semi is not to the same level of fanmade as the version of Mike you appear to speak of. /gen However, I will concede that my idea of Semi, or even just the Man or Unknown if my main theory is incorrect, possibly being a Goner may not be the case in itself. That I can go without, but I acknowledge what evidence I was able to parse. I find this to be the one similarity between my proposal and your version of Mike.
I do love how the assessment outlined with the whol semi / gaster development was almost 1:1 identical to how I had deduced all this over the years. I still remember fondly when we dove in SUPER deep to all the game files and determined a lot of things from that, and the development pages Toby put out was like the icing on the cake. As cool and even believable as this all seems though, taking a step back and thinking about all this makes it seem really out of place for the overall game. Toby does seem to enjoy having little things for us obsessives to find and loves dropping tiny hints here and there. But the idea of not only having a main character who lives outside of the narrative game world, but then another that was the basis of the CURRENT one "come back" seems so deeply meta it is just kind of too much. Unless it was just a fun non canon thing Toby wants to do for us on the side. Maybe this is all Semi and Toby will never ever explicitly state this and just leave it as a bunch of hints and man behind the tree events for us to hypothesize over. That at least, seems reasonable.
I still think it's papyrus cause of Halfbred's video. Gaster has pretty much replaced Semi's role in the lore but Jaru theorizes that the Gaster we see in Undertale is actually two different people. I don't think undertale's gaster is gaster and that universe's sans but maybe it's Gaster and Semi merged together (semi being the top half and gaster being the bottom.) To people who don't know the context this probably sounds absolutely unhinged hahaha good video.

Father Alvin??? It crossed my mind when in ch2 we see him from behind because he's looking towards Gerson's grave and his silhouette seems to resemble each other?? A common thing when designing characters is to create unique silhouettes for each one to make them recognizable and interesting, especially in such cartoonish characters as in comic, series or games in this case, and Redacted look like a tall, somewhat hunched person, but maybe he's not hunched over, but rather it's his shell on his back since... he's a turtle?? Even though we talked to Gerson in his shop he never mentions having a son, maybe it could be that he simply he doesn't tell us and that's it, or maybe he never had one in the first place, but in that case I wouldn't understand why Alvin does exist in Deltarune but not in Undertale when from a narrative point of view he could simply not exist either and nothing will change?? There is a reason why he is an addition to the game and the story more than "they needed a father for the church" because the church seems important for future chapters and story for all the religious symbolism, but then again, it could have been anyone else, not Gerson's son who doesn't exist in Undertale, does that make sense?? Anyways, this was my reasoning as to why Father Alvin may be the knight, that Gerson has a son now for some reason and he is apparently important because he is related to the church, beyond the evidence that already exists in the game and the possible motivations he may have. Also, Redacted was supposed to be in Waterfall like Gerson, in the stable, at Grandpa Semi's snail farm. Grandpa Semi and Gerson being two old men who live nearby I would expect them to be close, maybe something happened to Alvin in Undertale that turned him into whatever Redacted is, like an experiment, and since Toby likes to create and add secrets to his games maybe Alvin was that, but as the ideas developed further, it made less sense to keep Redacted as such, and probably merged all the concepts in one, a kind of ghost (Redacted) + inventor and scientist (Grandpa Semi) and Gaster was born. Now, if the man behind the tree is Grandpa Semi and the knight is Alvin that would be amazing, and with this I'm not saying that Gaster doesn't exist in Deltarune because both characters that he is supposedly based on now exist as different entities, only that thanks to what Toby once thought for Undertale he was finally able to create the story he always wanted to do from the beginning, which is Deltarune, like the 3 of them will finally appear and be important with different roles. This could explain why Gaster Blasters look like turtle skulls, why are there enemy stats in the code, because it was a secret boss that you were going to fight when you found the stable key and opened it, why Gaster's door is in Waterfall when as far we know he was a scientist in Hotland, and why the Valentine's letter look like it was written by Gaster but... not really lol
This isn't really related to your grander point, but this video made me realize that Grandpa Semi's phonecall being repurposed for Alphys kind of aligns well with her being Gaster's replacement in the final game and possibly by extension Semi's replacement at an earlier point in development. Obviously Gaster is probably where most Grandpa Semisms went, but it wouldn't shock me if some got allocated to Alphys as well. If your hypothesis is true then they both have hard to read handwriting at least lol Plus, Sans and Alphys being friends strikes me as a sort of last minute writing choice, some references towards it were even only added retroactively in an update, so it's possible Toby only thought of it when trying to fill in some gaps in Sans' character that Grandpa Semi's absence left.
