      Thanks! Regarding smokiness factor in the flavor profile, that would be more a result of roasting than oxidation. Oxidation generally brings forth rich, balanced, sweet attributes in the flavor profile. Roasting brings forth caramelized, nutty, toasted, and smoky attributes. But these two factors of processing are often combined, and as a result, work hand in hand.
