- It's been an interesting week to say the least, we clean up the rest of the veggies, the garden is completely black now and then I also had an. unfortunate accident.

Stewed Tomatoes:
grind tomatoes with largest holes.
1 tbsp sugar
1 tbsp pickling salt
boil jars for ½ hour.
Tomato soup:
15 gallons tomato juice
13 cups chopped onions
18 cups chopped celery
6 cups chopped beets
9 cups sugar
3 cups salt
4 lbs margarine
18 cups flour
Cut up tomatoes, cook approx ½ hour, then juice. Measure juice into kettle. Chop onions, celery, and beets with cube attachment, measure and cook. Blend them until they are smooth. Combine margarine, flour, salt and sugar with enough cooled juice to mix well, and then add to juice and blended vegetables in kettle. Boil for 20 minutes. Fill jars and put in tank until it reaches 216° point. Large recipe yields approx 80 jars.
NOTE: when making Gluten Free we swap the flour with starch.
Salsa:
30 cups tomato paste
10 gallons tomatoes (measure when drained)
2.5 gals red peppers
2.5 gals green peppers
2.5 gals onions
80 cloves garlic (add to taste)
8 cups celery
chop veggies, add to skillet with
30 cups vinegar
5 cups sugar
2 1/2 cups pickling salt
3/4 cup paprika
6 1/2 tbsp oregano
cook for 1 hour, pour into jars and allow to seal.

Giselle, I am so happy that you were able to stop the bleeding! Oh me oh my! Beets bleed; we bleed; and God looks after us all! Those beets are LARGE! Of all the summer veg, I enjoy the root vegetables and leafy greens most. Thank you for explaining your accident and we will keep you in prayers for quick healing and protection from future mishaps! Thanks for taking us along on your walk - I could smell the fall leaves from here! So much work to be done at the end of the harvest. I'm glad you are okay after your mishap with the knife - goodness! Some time ago I wrote that I wanted to send fabric to you. Unfortunately, the cost of mailing or sending UPS from South Dakota to you is astronomical! I'm looking into other alternatives. Until then, I am a faithful and devoted fan of your vlogs. Because of watching I was able to overcome my hesitation last week and engage two lovely ladies from a nearby colony. We had the most wonderful conversation! Gisele, if you like pumpkin spice in your coffee, try adding a tablespoon of pumpkin purée with a teaspoon of maple syrup and extra almond milk for homemade pumpkin spice latte. I think you would like it during the fall season.

I was surprised that your colony doesn’t can the beet greens! We grew beets in our large home garden when I was a child for pickling. We also canned the greens. Wash and soak them in deeper still water to get the sand out. They wilt a lot, and bleed like the beets, but they’re great with salt, vinegar, and a little salt, especially in the deep winter. Green, earthy, and delicious!

I leave all my bulbs planted . Cut them down in fall and have never had a problem with them year after year .
our winters are too cold, if you don't want your bulbs anymore and nobody else wants them just leave them in the ground they will be gone next year.
